How should black pudding be cooked ?

I've never had black pudding, but a number of my workmates like it. I'm curious as to the correct way of cooking it. Apparently, Prince Philip maintains it should be fried but Les Dawson advocated boiling. Can it be sliced and grilled ?

I used to put ketchup and piccalilli on mine 😁

Do they still.have the black pudding throwing competition in Rammy?

concretesieve · 31/12/2018 11:59

Crisp Oh, yes! Parents from Black Pudding Central though, alas, I've never lived there. Dad would eat no other, so it was a rare treat for him (the rest of us weren't fans Blush). He had it just as you describe for your first method with mustard.

Brace yourselves.... I moved from the North west to the Black Country and down here they serve it cold sliced on buffets in the pubs.....yep literally sliced and served next to the pork pies Confused

Haven't had the Bury black pudding before but I am passionate about the Stornoway one (the variety with the protected status). We'd slice off and fry in the first instance, grill being the healthier option after that. Not once have I boiled it.

I'd add it to anything though. Mashed potatoes, stews, wrapped up as part of a spring roll, stuff it in chicken breast before cooking, mixed into the duxelle for beef wellington, add instead of pork meat to sausage rolls. God I love it.

In the fires of hell.

IndigoSpritz · 31/12/2018 12:42

Fascinating business. I wonder if it could be used in slices as a pizza topping ? We have slices of garlic sausage, pepperoni and salami so I suppose it's possible.

It can Grin

Fried in butter and served with Apple sauce

BlackAmericanoNoSugar · 31/12/2018 12:51

I cook it in the oven, I'm do the rashers in there anyway so it's handy. The sausages go on the George Foreman.

Fried in butter and served in apple sauce sounds weirdly delicious.

It's delicious if it's cooked, cooled, crumbled and then used in the same way as you might use bacon bits. In salads, stirred into creamy pasta sauces, mixed into egg mayonnaise etc.

OkMaybeNot · 31/12/2018 12:52

Fried until crispy on both sides, soft on the inside. Mmmmm.

I love your two examples of black pudding expertise.

I too have seen black pudding on a Black Country buffet, in between the quiche and the pickled onions.

amusedbush · 31/12/2018 14:13

I’ve never heard of boiled black pudding!

Sliced and fried is the way to go. On a soft white roll with ketchup and a tattie scone 😍

ikltownofboothlehem · 31/12/2018 14:18

You know you've made me go out and buy black pudding for NYD breakfast don't you? I hope you're happy Grin

I went for a long walk the other day and for a pub lunch had a chip cob with black pudding and Stilton. It was delicious although I gave the dog the bottom half of the cob as I was stuffed.

AgentProvocateur · 31/12/2018 14:22

I also like it crispy and as ‘a dried out crumbly mess’ copyright @wickedgooddoge

buckingfrolicks · 31/12/2018 14:29

Finely sliced and fried with onions then thrown out as fit for nothing.

IndigoSpritz · 31/12/2018 14:34

buckingfrolicks. Are you not a fan of black pudding, or have I misunderstood ?

I'm amazed at how many people are talking about black pudding. I didn't think this thread would go beyond about a dozen posts.
