Vegetarian ready meals to feed a crowd

Suggestions for vegetarian meals I can just shove in the oven to serve a crowd - well, 8 people. Have family coming to stay the weekend including one vegetarian and would like to do a meal one night I can just crack out and put in the oven. So along the lines of vegetarian lasagne or moussaka or something similar? Any suggestions?

I saw M & S did a veg lasagne but it was a very dear £27 for one that only serves 6 (!!). Would also like to avoid Cook though I know they have lots of veg options, just don’t want to spend quite that much. Just normal supermarket type stuff that will serve like 6 (but I can afford two of not at £27 a pop!).

M&S do a veg pasta bake which is really nice Although I’ve only seen it in singular portions.

Try 'Cook' it's an online shop with homemade frozen meals- they have shops too- their vegetarian lasagne is AMAZING. And they have different size ones.

You could easily make one though- a lot cheaper. Or do a macaroni cheese with spinach in, that's delicious!

Oh sorry, just saw you mentioned not Cook.

I think it would be 100x easier if you made a veggie lasagne in advance and cooked it on the night? Only takes max an half an hour probably to assemble.

A lot of big portion ready meals are really expensive. And some are crap.

You could just do a big bowl of cooked pasta with sauce, some nice baguette, bowl of salad and let people serve themselves?

If you're feeding a crowd, ready meals can be expensive.

I'd do a few big veggie pizzas, garlic bread and a bagged salad.

I made this last night- I used 700g of quorn tho and 3 cans of tomato and double the white sauce measurements. Really nice!

How about filled pasta and the just doing a couple of salads to go with it - mozz/tom/olive/avo and then maybe a green salad with some ciabatta olive oil and balsamic?

As a non-veggie I'm vary of meat substitutes like quorn or tofu as I don't like the crap that goes into them.

If you can actually go into an M&S they do loads of veggie pasta options (all the "Italian" range is 3 For £7). You could grab several meals, bung them in microwave and hey pesto.

The £27.50 is from the "food ordering" range.

How about making some nice tarts with those sheets of ready rolled puff pastry? I do red peasto, beetroot, red onion and goats cheese. It's really good and quite rich. You only need a simple salad and some potatoes with it.

Oh,mig serves 2 apparently. I'm REALLY greedy and even I thought it was quite filling for 2. So maybe you'd want 3 for 8 people, with bread.

I do baked beans.

Chop garlic and onion and brown. Stick in big baking pan with chopped peppers (Large bits) several different types of pulse (Cannelini beans, kidneys, chick peas, whatever), a tin of chopped tomatoes and a load of pasata. Add some salt, pepper, herbs, harissa paste/chilli to taste, stir and bake until it's ready.
Add some things on top if wanted. (Sausages, meatballs, veggie sausages,etc).

Honestly? If I'm eating at a friend/family members house I think it pretty poor if they resort to ready meals.

Also as a veggie of 30 years vegetable lasagne was all that was available in many restaurants for many years so for me personally that's put me right off them to the point even the thought makes me feel nauseous. But that's me.

Very easy to make your own very large pasta bake, or a veg casserole or chilli (especially if you have a slow cooker), even frozen pizza preferable to ready meals.

Make a big spanokopita and put it in the freezer. Takes about half an hour to prepare and assemble, freezes really well.
