How do I fry an egg?

I am generally a competent cook but frying eggs are my nemesis. Please give me your failsafe methods for egg frying!

Crack egg into cup.
Use non-stick pan.
Heat oil on medium until it looks slippery.
Pour egg into pan & gently nudge the gold into position (if you like a particular aesthetic) or pierce the yolk & spread if you prefer.

Allow to cook long enough for white to solidify but not crinkle at the edges.

Flip if desired.
Serve.

You want the pan really hot. This makes the metal expand and close up any tiny gaps which the egg could stick in. Put the oil in before you heat it up, then heat it till the oil looks still, then turn the heat down a bit before you put the egg in or it’ll spit.

Don’t try to move it around too soon: wait till the white is totally solid and the yolk is as done as you want it (some people baste the top with the hot oil), then run an offset spatula underneath and carefully slide the egg onto your plate, toast or wherever.

All this assumes you’re using a cast-iron or other heavy-bottomed metal pan. Some people swear by non-stick for eggs, but I have no experience of that.

I couldn't tell you but I only came on here to see if I had wrote this thread and forgot about it!! 🤣

I remember my eldest coming to me to ask for dippy eggs and having to ask my friend who I was talking to in NZ at that moment how to make boiled eggs. My now teenager finds it amusing that I asked someone at the other side of the world how to boil an egg!!

My cooking has come along way since then but eggs still get the better of me!

Decent quality, smaller sized non stick pan.

Perfect for omelette, fried eggs and scrambled eggs.

I find the quality of the pan makes all the difference.

Crack egg into a cup, heat oil on medium high and gently tip egg in. A decent quality pan will allow you to move the egg about.

Fry on medium heat until it's ready.

Hot ban with veg oilcrack it leave it let it cook for 2/3 minutes flick oil over the yoke untill it goes white and there you go.

I don't like gooey white on top of the yolk so spoon hot fat over it until it's cooked but the yolk is still soft.

Low-medium heat, nonstick frying pan, organic or free range eggs (really makes a difference to the taste). Spoon the oil over the top whilst frying, it ensures the top half cooks without you having to flip it.

Once oil is hot, crack the egg in

Leave egg alone until cooked to your liking

If you find the top of the white is the only thing not cooked, you can drop in a spoon of water then throw a lid over the pan. The water will turn to steam immediately and the steam will be caught under the lid and cook the white. The pan obviously has to be hot enough for the steam to be produced.

I can fry a perfect egg, CANNOT for the life of me poach an egg..

A thick steel pan, veg oil, preheated to medium low, crack egg on the pan edge, lower egg on to the hot surface. Put over it a domed saucepan lid smaller than the pan, so the egg is closely covered. This cooks the upper surface. When the top of the yolk is opaque, it's done.

I can’t fry an egg, but I am a poaching expert Grin

Get some hot water in a pan (I always if the pan is smaller and not non-stick). Bring to a gentle rolling boil, tip in some vinegar (malt or white wine), get a slotted spoon, stir the water and gently crack in the egg into the middle of the swirl. Cook for the length of time it takes for a piece of toast in the toaster. If the water gets foamy quickly turn it down. Perfect poached eggs :-)
