What are your quickest, low prep, short cooking time meals please?

I’m really struggling with this week’s meal planning. Evening activities and collections around dinner time coupled with fussy eaters. I’ve given them the choice and so far we have fajitas, tacos amd fish n chips. I need 2/3 more meals which will be effortless to prepare and quick to cook 🤔 - suggestions more than welcome. Thanks

Pasta, meatballs and hidden veg sauce

For the sauce throw lots of veg on a tray (say tomatoes, onions, courgettes, carrots whatever you got...) drizzle with olive oil, add some herbs and cook on low in the oven. Once cooked blend it all into a sauce. You can make this ahead and freeze it or store it in the fridge. You can also omit the meatballs and add some lentils to the sauce for some added protein.

Pasta with tomato sauce.

Tomato sauce is onions softened, bacon or chorizo if wanted gently fried until cooked. Garlic if liked. Add tin of chopped tomatoes, simmer, add random antipasti (olives and artichoke and sun dried tomatoes work well with my family). Ham or other cooked meats can stir through at the end as well.

Takes about the same time as cooking the pasta!

Stir fry, add soy sauce. DD(7) will eat this forever.

If I have a bit more time I do a more adult version with “satay” sauce made of coconut milk, lime juice, peanut butter and sweet chilli sauce. Then shredded cabbage, red pepper, spring onion, coriander.

I personally like buying an already cooked hot chicken shredding it and mixing with penne, extra virgin olive oil and a bit or seasoning or shredding it and mixing it with micro rice! That's my go to quick meal (just for me mind as I'm boring! I wouldn't do that for the rest of the family)

I'm now very hungry reading all these lovely suggestions!

My contribution -

Put salmon fillet in a foil parcel with a tablespoon of sesame oil, same of soy, a few chilli flakes, sprinkle on some 5spice powder and drizzle on honey. 5 mins prep, bang in oven for 20.

When almost done put some noodles on hob to boil with a big handful of whatever frozen veg you fancy.

Serve salmon on top of veg and noodles and pour all the lovely juices from parcel over.

Quick tasty and super healthy and not many dishes. Result! Wink

Jacket potatoes are not a short cooking time!

Risotto is actually fairly quick. Fry the rice for a good five minutes and then it is actually done in another 15. I like adding mushrooms and leek and cheese, or leftover chicken from a roast.

We often have sausage bake - chop onions, peppers and potato into slices (the potato needs to be about 4mm thick). Slosh in oil and put the sausages on top. It takes about half an hour at 180 but is so fast to prepare it might be worth it.

Likewise, buy sausagemeat (you can get it as is, or buy actual sausages). Stuff halved peppers with a chunk of cheese and the sausagemeat, and bake for about 20 minutes/half an hour.

Quicker:

Pan-fry slices of aubergine, then (separate pan) slices of halloumi. Bag of watercress or rocket salad, generous drizzle of balsamic glaze, and you're done. It's nice with couscous but also nice on its own.

Quickest:

When the oven's on, stick in a tray of roast veg. Then when you want a quick meal, cook pasta and, as it's cooking, heat up the roast veg with a spoon of soft cheese or a bit of water. Chopped ham is nice to add if you've used veg like tomatoes and peppers.
