I’m really struggling with this week’s meal planning. Evening activities and collections around dinner time coupled with fussy eaters. I’ve given them the choice and so far we have fajitas, tacos amd fish n chips. I need 2/3 more meals which will be effortless to prepare and quick to cook 🤔 - suggestions more than welcome. Thanks

Caramelised onion sausages, a pre prepared pack of Mediterranean veg or root veg. Roast together with some balsamic vinegar and honey. Serve with mash (colcannon from m and s is the best).

Chicken tray bake, chicken thighs, peppers, potatoes and whatever herbs you fancy. A tiny splash of oil as the chicken releases fat. All ready at the same time with minimal washing up. Prep 5 minutes cooking time under an hour

Salmon (oven or fried)
Boiled new potatoes (no peeling required)
Green veg (boiled)

Chopped bacon, garlic, mushroom, Parmesan and cream sauce with pasta. Yummy and done in 10-15 mins!

Bacon and egg pie, not quick to cook but can be doing other things while it works its magic

Puff pastry in ovenproof dish, fill dish with rashers of lightly cooked bacon, break 4 or 5 eggs on top, loads of black pepper and put the pastry lid on. Oven for 45 mins, job done, bish bosh, family think you're marvellous.

@AlrightBabby - do you beat the eggs first?

AlrightBabby · 10/12/2018 08:37

I don't beat the eggs, no, but I imagine you could. I do try and break the eggs so the yolks are distributed so that every slice will get one 😋
