What can i make for a (very) light Christmas lunch?

My DP is working on Christmas Day, so for the first time ever I am doing Christmas dinner instead of Christmas lunch. Im quite happy about this as it gives me all day to prep a good dinner - but what about lunch?

It will only be me and Mum, as DD is going to her dad for the whole of Christmas. I really dont want to do anything too heavy but we will need to eat something!!

What can i serve up to keep us alive and in the Christmas spirit, but not fill us?

Do you like seafood? You could do some sort of seafood platter served with crusty bread and salad?

LoveManyTrustfew · 01/12/2018 17:53

Smoked salmon salad with some prawn cocktail on the side.

Make your own brown bread this recipe is simple.

Bia is Irish for food.

I would have something similar to a posh starter.

I would do a massive fry up for brunch !

SDTGisAnEvilWolefGenius · 01/12/2018 17:57

We are having posh fish finger wraps - wraps with tartare sauce, nice salad and posh fish fingers - delicious!

scater · 01/12/2018 18:01

I'd go with smoked salmon and scrambled eggs with a glass or seven of fizz Wink

JennyHolzersGhost · 01/12/2018 18:02

I usually do smoked salmon on nice bread with lemon to squeeze, sometimes they evolve into a Nordic open sandwich type of thing.

trilbydoll · 01/12/2018 18:03

My mum has always done an evening meal because she found it too stressful rushing back from church to make lunch. We used to have crackers, cheese, cold meat and salad for lunch.

funnylittlefloozie · 01/12/2018 18:06

Posh fish finger wraps sound lovely, might have to do them another day. Its got to be salmon, though, hasnt it - DP isnt over-keen on it, whereas Mum loves it. It makes sense to serve the salmon at the meal that's just her and me, and make a different fancy starter for dinner!

Salmon en croute...I'd buy this already made from waitrose or m&s. Serve with new potatoes and a watercress salad.

HollowTalk · 01/12/2018 18:16

I'd do smoked salmon and cream cheese croissants. No point in cooking a meal if you're cooking one in the evening.

DisrespectfulAdultFemale · 01/12/2018 18:19

Quiche, salad, humus and bread.

bookmum08 · 01/12/2018 18:25

Jam Sandwiches.
Or ask your mum if there is anything she particularly fancies.

WWlOOlWW · 01/12/2018 19:01

Fry up at 10.30am ish.

MortyVicar · 01/12/2018 19:24

I'd do smoked salmon and cream cheese too, but I was going to suggest bagels or blinis. With a glass of something alcoholic and fizzy.

groundcontroltomontydon · 01/12/2018 19:29

Spiced parsnip soup and mini savoury muffins - or the massive fry-up brunch suggested by pp

IHaveBrilloHair · 01/12/2018 19:32

Lobster bisque

CountessOfNowhere · 01/12/2018 19:51

We usually have Christmas dinner at about 5pm and normally have (quorn) bacon butties at about 11 for brunch to keep us going.

DeadCertain · 01/12/2018 19:52

Eggs Benedict or scrambled eggs / smoked salmon, that kind of thing.

KitKat1985 · 01/12/2018 19:53

Brie and cranberry baguettes or paninis. Yum.

Janus · 01/12/2018 19:54

You could have a nice smoked salmon salad with a bit of fennel and grapefruit segments in there?
Or we really like a baked Camembert with really good bread and breadsticks to dip in.

Small blinis with cream cheese and smoked salmon, possibly with a glass of cold champagne. And nibble on clementines/nuts/dates throughout the day.

I don't understand having a massive fry-up on the same day as Xmas dinner.

winterisstillcoming · 01/12/2018 20:09

Eggs royale?

Julianaa · 01/12/2018 20:13

Poached eggs (with smoked salmon?), or a salad with king prawns or smoked salmon, or a wintery soup (chestnut).
