Tonight, DD is having leftover tomato and mascarpone sauce (from her tortellini last night), with fried bacon lardons (maybe some mushrooms) and pasta.
Meanwhile, I am having the leftover tomato sauce from our dinner last night - which has carrots, onion, tomato and pepper in it and plenty of flavor from the lamb shanks (no leftover meat!) - served with pasta. I know it will be too rich for DD to eat.
Something easy that we do a lot is 1 bag of baby potatoes tossed in 1 jar of Sacla cherry tomato and chilli sauce, with 1 chorizo sausage cut up and added (and we usually add a pack of Lidl's bacon lardons to it as well), and once mixed together, all cooked in the oven for about an hour or so, until the potatoes are cooked through.
Another thing handy for when you have time is to prep a bag of mediteranean veggies to roast. These can be done ahead of time. Easily bulked for a couple of days dinners, to freeze leftovers raw to cook another day, or to freeze leftovers already cooked to serve with tomato sauce and pasta.
Dice, to similar sized dice, a mix of veg - onion and garlic, then peppers, mushrooms, courgettes, tomatoes, aubergines etc. (Whatever you like and have available basically). I find putting them into a large sized freezer bag works well to marinade and to deal with storage/leftovers.
Season with salt and pepper, some dried herbs (basil, oregano, thyme and rosemary are all good, and a mix of those works well too), and a slug of balsamic vinegar if you have it (not essential).
Pour in a good slug of olive oil as well.
Give a good shake, and ignore from 20 minutes to a full day (I often make the night before for evening dinners).
Pour into an oven tray and roast until cooked (I tend to do about 1-2cm dice, and they take about 20-30 minutes to cook).
Roasted veg are great with joints of chicken and baby potatoes for midweek, or lamb shanks. Or with larger joints and only put in close to the end of cooking.
Or put them in an oven proof dish with some passatta, put some chicken breasts or good dinner sausages on top, grate over some mozzarella or parmesan, and bake.
