I'm in such a rut if cooking the old same things. Have a 2.5 year and a 11 week old so not loads of time to spend cooking these days but I do enjoy it. We've been living off slow cooker dinners as to can get them prepped while the children nap (ha!) or just having boring old bolognese, curry etc.

Been lazy today and didn't prep dinner this morning. Have just got some chicken breast mini fillets out of the freezer so will do something with those. Probably a curry of some sort. Got rice and poppadoms in so should be ok.

So, what are you having? Inspire me please so I can add some new things to my shop next week!

pasta with chorizo and chopped tomatoes. DH is out at cinema, so just me and DD, plate on lap in front of tv.

At weekends, I chuck a whole load of stuff in slow cooker, lasts normally 2 days warm meals. Easy peasy.

I've batch cooked chilli and spag bol. I haven't decided which will be eaten tonight and which will go in the freezer.
Tomorrow the fish van comes to town so we will probably have salmon, boiled potatoes and steamed veg.

No idea. It's the day before our biggest cooking day of the year, Thanksgiving in the US. The kitchen is already a mess. We will probably send out for pizza, along with half the neighborhood.

Tonight, DD is having leftover tomato and mascarpone sauce (from her tortellini last night), with fried bacon lardons (maybe some mushrooms) and pasta.

Meanwhile, I am having the leftover tomato sauce from our dinner last night - which has carrots, onion, tomato and pepper in it and plenty of flavor from the lamb shanks (no leftover meat!) - served with pasta. I know it will be too rich for DD to eat.

Something easy that we do a lot is 1 bag of baby potatoes tossed in 1 jar of Sacla cherry tomato and chilli sauce, with 1 chorizo sausage cut up and added (and we usually add a pack of Lidl's bacon lardons to it as well), and once mixed together, all cooked in the oven for about an hour or so, until the potatoes are cooked through.

Another thing handy for when you have time is to prep a bag of mediteranean veggies to roast. These can be done ahead of time. Easily bulked for a couple of days dinners, to freeze leftovers raw to cook another day, or to freeze leftovers already cooked to serve with tomato sauce and pasta.

Dice, to similar sized dice, a mix of veg - onion and garlic, then peppers, mushrooms, courgettes, tomatoes, aubergines etc. (Whatever you like and have available basically). I find putting them into a large sized freezer bag works well to marinade and to deal with storage/leftovers.
Season with salt and pepper, some dried herbs (basil, oregano, thyme and rosemary are all good, and a mix of those works well too), and a slug of balsamic vinegar if you have it (not essential).
Pour in a good slug of olive oil as well.

Give a good shake, and ignore from 20 minutes to a full day (I often make the night before for evening dinners).

Pour into an oven tray and roast until cooked (I tend to do about 1-2cm dice, and they take about 20-30 minutes to cook).

Roasted veg are great with joints of chicken and baby potatoes for midweek, or lamb shanks. Or with larger joints and only put in close to the end of cooking.

Or put them in an oven proof dish with some passatta, put some chicken breasts or good dinner sausages on top, grate over some mozzarella or parmesan, and bake.

I'm also prepping potatoes tonight for Thanksgiving - I have (raw) roasted med veg and separate bags of French beans to defrost, bought my turkey breast today so that is defrosting, and I have the last of 2017 Christmas turkey gravy to defrost as well.

Goodness knows. I'm calorie, carb, fat and sugar restricting at the moment and am SO BORED AND HUNGRY. I had grapes for breakfast, mushroom rice for dinner earlier, and satsumas and tomatoes for snacks. I suppose a baked potato and fat free cottage cheese will be OK for tea. I really want a mayonnaise and cheese sandwich on white bread with a packet of ready salted crisps and a fucking Crunchie though :(
