I just made a chicken Korma with a pataks jar, boned thighs , onion and a few tiny potatoes that were info the fridge. And rice. It was easy and vv tasty

Pot roasted joint of beef in tomato sauce slow cooked all day serve shredded with spaghetti
Chicken, chorizo and chickpea stew (or swap chickpeas for cannellini beans)
Stew made with lamb and beef, potatoes, swede and carrot served with crusty bread and red cabbage
Slow roast leg of lamb with mash and roast veg
Mild chilli made with chunks of braising steak instead of mince.

I love winter cooking!! My kids have really enjoyed all of these recently.

Macaroni cheese with leeks and cauliflower. I mix ham/ crispy bacon in too.

Sweet potato, red lentil and chicken curry/dhal. Make loads and freeze.

I made this tonight, so easy...
cherry tomatoes X2 bags
red onion
Red pepper and a yellow pepper
5ish cloves of garlic
Roast all above on a baking tray with olive oil for 40mins
Put in a pan with veg stock, 2 grated carrots and a ton of tomatoes. Simmer for 20 mins and then blend
Serve with cheesy garlic bread.

This is way nicer than you'd expect and super easy. I use cooking chorizo and fry it up with some onions but I expect it's great as it is:

Baked eggs... chorizo, onion (any veg really)
Tinned tomato in a oven dish, crack eggs on top and bake till eggs are done. Serve with crusty bread.... and hot sauce for me

Chicken fruity curry- chicken, apple, sweet corn, carrot, korma paste, mango chutney, tomato purée, coconut milk and dash of curry powder. Absolutely delicious served with rice and naan bread

Fish pie
Chicken curry with a big spoon of mango chutney
Chorizo and roasted veg all in one Pyrex dish in the oven, drizzled with oil. Parboil potatoes for added cheap bulk. Sprinkle spices on top.
Cauliflower cheese, add sausages if you fancy.

Sunday ; roast beef
monday: tuna puttanesca pasta
Tuesday: cottage pie
wednesday: mid week roast chicken
thursday: rissoto made with left over chicken and chicken stock
Friday: lamb dansak

lunches for couple of days : homemade butternut, leek and carrot soup
End of week or weekend soup: minestrone made with left over veg, cubed and broken bits of pasta.

All planned in our family with allergies in mind, current allergy list which impacts main meals:
milk, eggs, peanut, tree nut , beans.

Chicken and barley stew - chicken thighs (bone in), stew pack (carrot, onion, swede, parsnip), chicken stock eg kallo, mixed herbs/herb de Provence, pearl barley.

Chickpea curry - can yellow chickpeas, can brown chickpeas (for variety, can also use any beans), 2 onions, can tomatoes, 1/2 jar curry paste (I use jalfrezi), fresh coriander. Serve with basmati rice and natural yogurt.

Slow cooker stew. I literally bung in all raw ingredients and do nothing ex pet thicken the gravy with door 30 minutes or so before serving.
I'm the laziest cook ever - I don't brown my meat off or anything. I chop it all the night before and leave in fridge. Pop in slow cooker in the morning. Go yo work vobe hone 9 hours layer and eat!!

We just had sausage casserole, mash, cauliflower and green beans.

Sausage casserole = 2-3 large sausages per adult/teen, a large onion, 2-3 large carrots, 1 stick celery, packet of sausage casserole mix.

One meal I came up with recently was based on what I had left in the fridge.

I heated some oil and a knob of butter on an oven tray, added some tiny potatoes and seasoned with salt pepper and a little paprika and cayenne pepper. Roasted in oven for about 30 mins at 200C fan.

Pork tenderloin, cut into medallions. Flattened slightly on a board, seasoned with salt & pepper, and sprinkled with mixed herbs. Get a frying pan hot, add a little oil and cook pork, until the outside is dark and caramelised, and cooked through, adding a knob of butter and some lime juice about 2/3 way through.

Served with steamed cabbage and gravy if required.

DS (15) loves this meal and asks for it regularly.

I always plan to do a suet pudding with leftover stew but the buggers have yet to leave enough!

This winter I’m determined. I’m only going to bring half the stew to the table and squirrel the rest away for a rib sticking pie.
