If you were making bolognaise...

With 1kg of good quality beef mince, how many adult portions would you expect to get?

I'm feeling disappointed with my batch cooking efforts.

What strange abominations are going on with all this peculiar veg going into bolognese ! mine has 500 grams of good mince beef onions garlic peppers tinned and pureed tomato and mushrooms if I've got a few lurking at the back of the fridge but nothing else I don't use frozen veg with the exception of peas and corn ( which don't go in a bolognese ) , lentils broccoli green beans celery carrots that sounds more like vegetable stew with a meat added as an afterthought.

Elephantinacravat · 20/09/2018 07:20

Use frozen onion, garlic and vegetable base mix (finely chopped carrot/celery). No chopping, no wastage and I find it just as good.

Elephantinacravat · 20/09/2018 07:21

Yeah I agree that proper bolognaise doesn't have brocoli etc in it. Although I will admit to putting them in to try and up the vegetable quota.

Thank god you came back to rectify that Big Grin
A kilo would probably serve 6 here, grown up dp and I, 2 teen dds and a ds who is 7. There may be enough left to make another dinner.
Dp will basically serve up what’s there.
If there was 500g mince, we eat it all. If there’s a kilo, he’ll still serve most of it up. Thank god we aren’t into batch cooking!!

CakeNinja · 20/09/2018 07:28

And what is this abomination about adding lentils and broccoli etc? That’s not bolognaise Shock
Carrots, onion, celery are my only concessions, I’m surprised at a lot of these recipes containing all sorts of random items.

DunesOfSand · 20/09/2018 07:30

500g at a time here. Does 2 adults and 2 kids, twice. Call it 6. So 1kg would do 12 portions.

Xmasbaby11 · 20/09/2018 07:33

1kg would do 6 to 8 portions. I don't like bulking it out too much or it doesn't taste like Bolognese any more! We serve it with salad or corn on the cob and have plenty of meals with lots of veg in.

SomethingNastyInTheBallPool · 20/09/2018 07:41

We get 4 adult portions from 500g, so 1kg would make 8.
With 500g, I use 2 tins of tomatoes, 1 onion, 1 large carrot and 2 cloves of garlic. Also add red wine, Worcester sauce and a bit of milk, plus fresh or dried rosemary.
Bulking it out with lentils is a great idea - must give it a try.

lynmilne65 · 20/09/2018 08:03

Do you soak the lentils first ?

Airaforce · 20/09/2018 08:25

Lentils stretch out the mincemeat otherwise it'll all be eaten at the first serving at my house.

DorisLessingsCat · 20/09/2018 08:26

I soak the lentils first, only because it apparently makes them less farty Grin

1kg mince, 3 tins toms, giant onion, 3 clove garlic, some diced chorizo, sun dried toms, carrots, herbs salt and pepper. Mince browned then all of it chucked in the slow cooker.

Made 8 portions (all generous). 2 for me and dhs dinner that night, 4 in the freezer. 2 tubbed up for lunches through the week.

TittyGolightly · 20/09/2018 08:31

1kg mince makes about 36 portions of Michaela Chiappa’s ragu.

CutesyUserName · 20/09/2018 08:41

That would be at least 10 servings in my house, but I use loads and loads of veg to bulk it out to make it less calorie dense.

user187656748 · 20/09/2018 08:50

Mine is very veg heavy and includes tomatoes, mushrooms, peppers, carrot, onions, garlic, spinach and sometimes aubergines, courgettes and olives if I have them. I'm another where 1kg of mince would do up to 16 adult portions of bolognese.

CrispbuttyNo1 · 20/09/2018 09:43

“1kg mince makes about 36 portions of Michaela Chiappa’s ragu”

36??

Is that a teaspoon per person??

verite · 20/09/2018 09:53

At least 8.

ThanksItHasPockets · 20/09/2018 09:56

36 portions is plausible if you’re serving it in the Italian way. Italians use much much less sauce than we do in the U.K.. It’s more of a dressing on the pasta and it’s tossed through.

Blobby10 · 20/09/2018 10:10

I would add carrots and tinned tomatoes but also beef oxo cubes and cornflour to thicken. This always padded out the bolognaise but it really depends on portion sizes - my teenage boys (at the time) had larger portions than me!!

TittyGolightly · 20/09/2018 10:17

It’s incredibly rich (no tomatoes, red wine, cooked for 3 hours) so a heaped tablespoon is a portion.

TittyGolightly · 20/09/2018 10:17

I make it about 4 times a year and freeze in individual portions.

MulticolourMophead · 20/09/2018 10:23

1kg of mince would give me 10-12 portions. I usually use a mix of beef and pork mince.

I cook mine using onion, garlic and carrot, tinned tomatoes, tomato puree, seasoning, some mixed herbs and a pinch of sugar to counteract the acidity.

TheFifthKey · 20/09/2018 10:24

I used 500g last night and made enough for 1 adult and 2 children to eat straight away, one adult portion for lunch the next day and froze half for another time! So I got 4 adult and 4 child portions from 500g. I must be stingy!

delphguelph · 20/09/2018 17:24

How many lbs in a kilo?

And if you use ff mince it'll fill you up more.

Broccoli? I'm a skin flint but I don't do that!
