Egg mayo sandwich. Eating one now. Still a bit warm and really gooey. Nom nom.

What is it for you that is always best made at home instead of shop bought or restaurant?

I think there's an element of what you're used to.

I went to a lovely, highly recommended Italian restaurant once and ordered spaghetti bolognese.

I was gutted that it didn't taste as nice as my own, home cooked version. And cost 3x more!

Things which are almost always better in a restaurant:
Steak and chips
Crab or lobster- too much hassle at home

Well, I only have one about once a year because they're so hideously calorie and carb-laden. Apparently even the little dips are 200 cals each!

Marmalade, raspberry gin and shortcrust pastry.

Just made pizza dough using River Cottage magic bread dough, a third used rest in the freezer, very nice it was as well

Pretty much every tastes better homemade but homemade nachos have ruined me and everyone I’ve served them too.

So so simple and worlds better then a packet of Doritos tipped out and covered in Jarred sauces.

Would you share the recipe for homemade nachos?

For me tea and toast are the ultimate... so perfect at home, so pointless elsewhere.

Almond paste is fabulous when homemade.

It’s literally tortilla wraps, cut into triangles (about 12 per wrap) then fried for a few seconds until golden. I’ve heard you can bake them but I haven’t tried that.

We tend to serve with homemade chilli or slow cooked chicken fajita, lots of cheese and jalpenos.

I'll do the ingredients in one post then the method in second post.

Ingredients - makes 20 individual portions. I freeze mine into cupcake tins then separate and bag them all.

2lb onions finely chopped
4cm piece of fresh ginger - peeled and grated
6 cloves of garlic
1 tin chopped tomatoes
3-4 green chillies - chopped
4 teaspoons (tsp) ground coriander
1/2 (half) tsp ground cumin
1/2 tsp turmeric
1/2 tsp garam masala
1/2 cup chopped fresh coriander
1 tsp salt
Ghee or oil

Curry in a Hurry base - method

Heat ghee or oil in large pan and fry the onions on a gentle heat until they are dark brown in colour. I cannot emphasise this enough - until they are dark brown and caramelised. This'll take a good half hour. Stir frequently until they're done.
Blend garlic, chillies, ginger with 2 tbsp of water.
Add this mix (which smells bloody amazing!) to the onions and cook out for 3 mins.
Add the spices and cook out for 2 mins (add a tbsp if water if it's a bit dry or sticking)
Stir in the tomatoes, salt, fresh coriander and 250ml of water
Bring to the boil then simmer for 15 mins
Allow to cool then split into portions

This base makes the most delicious korma I've ever eaten. You look at it and think nope, this is not going to make a korma but once you add coconut cream and water etc - oh man!
