My daughter now 4 days old, no name yet, was thinking Eve, now thinking Xanthe or Zanthe. Any thoughts on these?? Prefer the look of Xanthe but will it make people struggle to know how to pronounce it??

Xanthe is how it is spelt.
Lovely name.
I think that pronouncing an X as a "Z" sound shouldnt be too strange for people.

Forgot to say, I do think it's a beautiful name

Xanthe is the correct spelling, so obviously the one to go for.
It's a pretty name.
