But I really really dislike the nn Vinnie, would this be enough to stop you using Vincent which I absolutely adore

Obviously you’re going to get people on here saying, “Are you giving birth to a sixty year old man?”
Use whichever name you prefer.

Frank. I prefer Vincent in a vacuum but dislike Vince and Vinnie so wouldn’t use it for that reason.

Yes because if your DS decides he wants to be Vinnie as he grows up you'd hate it.
