Depends on the surname. I don't like single syllable middle names, use a family name instead.

Poppy is a really, really common name for dogs where I live. I really wouldn’t give a human that name although obviously lots of people do because I can think of many.

Poppy Edith doesn't work well because the two names run together.

Poppy Violet is two flower names; not keen.

Poppy Beatrix is nicer than Poppy Mabel.

Poppy Beatrix of your choices. Poppy is a bit cute imo, so I like the idea of a “strong” or more serious sounding middle name for balance. Your other choices are also quite retro trendy, and since Poppy is a popular name too, something a bit more unusual as a middle name sounds refreshing to me.
