Sausage baps need a salad-y component

So I've been having sausage baps recently and I feel they need some sort of salad component. But I cant figure out what. Mixed leaves doesn't seem to work, nor would a coleslaw.

Current components:
Heck chicken sausages, buttered flour bap, chilli jam, mayo, pickled gherkins on the side.

Did you mean jerk chicken? If so, what about a mango slaw? Yum!
I just looked up Heck Chicken Sausages and realize you didn't mean jerk chicken.
I'd still try mango slaw.

Make a type of salsa with tomatoes, peppers, onions, chilli, something fruity (mango or pineapple)

The only leaf that can hold its own with a sausage is rocket. Although I think the only vegetable that is suitable for a sausage sandwich is a lightly fried onion. Nothing is going to make it sausage sandwich healthy, adding leaves is just a waste of a good bit of salad

I love salad but it definitely doesn't go with sausage. A sausage bap needs, if anything, an egg and condiment component, but certainly not salad.

Potato salad on the side, would add grilled onions to the bap.

I’d make a salsa with onions, bell peppers, chilli peppers and tomatoes. Maybe some radish.

Ohhhh yeah...but its got to be square sausage, fried onion, grated cheese, brown sauce on a crispy roll 😋. Food of the gods!!!

The key fact here is they are chicken sausages. I’d go shredded iceberg, gherkins, red onions and garlic mayo.
if they were pork sausages, fried onions and ketchup!

Sausage baps need only red sauce (brown is permitted), but this is for pork sausage.

Heck chicken sausages are reconstituted chicken so I guess would go nicely with some salad. Lettuce and tomatoes perhaps some red onion. Anything you fancy really. Pork sausage doesn't need to be paired with salad.

Hmm, if it wasn't the heck chicken (Italia?) sausages I'd say rocket.

Spinach leaves might work.

Lincolnshire sausages, sliced beef tomatoes in a white barm/bread roll. S&P and maybe a little HP if liked. 😋

I’d shove a handful of spinach leaves in there.

What’s wrong with coleslaw? Is it falling out? You could just put it on the side.

Rocket or watercress are what I put with sausages and bread. The slight heat works with the fattiness of the sausage.

Grated carrot salad on the side, perhaps with some sultanas, lightly seasoned and dressed with olive oil and lemon?
