Sourdough discard recipes

My starter is just coming up to speed. I've been inspired by this thread www.mumsnet.com/Talk/food_and_recipes/3864392-Calling-sourdough-starter-experts to start a sourdough discard recipe thread.

So what do you use yours for??? Post links and pictures if you like. Also might be worth mentioning if you're starter has graduated or isn't fully live.

I think most people throw it out but waste not want not. I'll post my recipes in just a moment. I'd love someone to start a sourdough graduant thread 😂 I'm almost there

Made these using newish starter, not ready for bread. I had batter leftover and it doubled in the fridge overnight. Made really light and puffy 🥞 really tasty. I made half the mix and got 2 servings for 2 with a couple leftover

The above was made with new in training starter. I made several changes 😂

  • used two round silicone cake tins (cooking time adjusted)
  • added 2tsp cinnamon, 1tsp mixed spice to main cake batter
  • halved the crumb mix
  • added double cinnamon to crumb mix
  • creamed the sugar and butter for the cake, then lost the plot and dumped the measured ingredients all in one and whisked
  • added half cup extra starter and extra milk as it felt dry

    I've kept half in the fridge and the half we are eating is still 😋 4days old. I made a basic buttercream and added a tsp cinnamon to it to accompany.

I have probably a really stupid question...but in the "discard" recipes - the starter should still be fed/bubbly?

I think feed the starter you have reserved, I didn't feed the discard, just added to the ingredients for pancakes and left to sit for half an hour.

@livingoffcoffee I just used it before feeding so inactive/unfed. I Measure out 50g to feed, and put the rest in a tub in the fridge.

I take/use the term discard as the bit you don't need ( normally binned) . No silly questions here 😁😁ohhh I need to go onto chrome I can see pp posted links I can't see in the app

Actually done recipes state whether the discard should be fully uhhhhh ready to make bread or just beginner. Certainly in that king arthur website it stated anyway.

I want to try this scallion pancake (go 2m 30in if you don't want to listen)

Another potentially silly question...

I fed my starter this morning and just used some of it to start a loaf. So I now have 195g of starter remaining in my jar.

Could I just put all of that back in the fridge to keep going? I can't see how I'd ever have 227g of starter to discard, plus however much for the bread, plus some to keep?

I feel like I'm probably missing something really obvious! (Can you tell I'm usually a cake/cookies type baker?? 🙈)

Don't be silly we're all learning as we go. So my understanding is you feed it, let it become active then put it in the fridge which kind of puts it on standby. I don't think you put a "hungry" starter in the fridge but I'll have a hoke and get a definitive answer. You could always discard some to make it a bit smaller, or keept it the size it is and feed it based on that. If i understand right, you can always bulk it up later. Let me have a look! There's so much to it, it's a minefield

Scroll to number 2 which I think is where you are now (a hungry unfed starter). Then follow step 3 using the quantities you normally use to discard and feed. Chuck the discard in a tub in the fridge to use later on for something

Oops we posted at the same time. Yes i have too. Certain parts I'm very clear of, others absolutely not! There are so many technical terms as well. Autolyse, banneton and leaven I understand but the rest all mingles in my brain in confusion. I think it's so overwhelming also because there's are many different methods which may not use all the same stages

Thanks for recommendation for crumpets which were more like little flatbreads- but nice all the same. One cup of discard only makes enough for two people for breakfast though!

Just wanted to add that my poor starter is looking very healthy this morning - I was definitely underfeeding it.

I used the discard to make sourdough pancakes (a simpler version than yours @MyShitisreal, as I wanted them straight away). They were absolutely delicious.

@Pomegranatemolasses that's great news. I think your scaled yours down yesterday didn't you????That's exciting. I genuinely was so excited to see my wee Starter come n back to life, disproportionately so tbh 😂

Great news on the pancakes. They don't need to be complex, it was just the recipe I found. Stick a link up sure and it will hopefully help someone else 😁

Definitely recommend making extra batter next time to keep in the fridge overnight (no matter what recipe) I'm fairly certain it will rise like a bugger 😂

Ingredients

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
2 tablespoons granulated sugar
1 teaspoon salt
1 cup sourdough starter
1 1/2 cups milk
1 large egg beaten
2 tablespoons vegetable oil
Instructions
In a large bowl, whisk together the flour, baking powder and soda, sugar and salt.
Add the sourdough starter, milk, egg and oil. Mix well just until combined.
Spray a pancake griddle with cooking spray or grease well with butter. Heat to about 300-350 degrees.

Pour 1/4 cup pancake batter on the hot griddle. Cook until the pancake starts bubbling on top, then flip the pancake.
Cook for an additional 1-2 minutes or until the pancake is cooked through.
Serve warm with butter and syrup.

The above is the recipe I used. Apologies for the American measurements. I didn't use a griddle, just my normal frying pan. Hope you enjoy!

Thanks for the recipes! Strong white bread flour is in short supply over here in my bit of Canada. Managed to source some through a local coffee shop that has started selling produce etc. I think 20kg will keep me going for a while!

@Pomegranatemolasses honestly I've always wanted to try sourdough but never really had the confidence so it's the perfect time to try and a great distraction. If anyone told me I'd be doing a happy dance at fermenting flour and water I world have laughed. It really is such a simple pleasure though 🥰 so glad your starter is sorted, it stressed me out so much when mine was being inactive

@moosebetimeforsummer 20 kilos, you lucky duck. Oops nearly typoed duck as something else there 😂 that loaf looks amazing. How many have you made???? Was the first one terrible 😂 . Total bread dreams
