My starter is just coming up to speed. I've been inspired by this thread www.mumsnet.com/Talk/food_and_recipes/3864392-Calling-sourdough-starter-experts to start a sourdough discard recipe thread.

So what do you use yours for??? Post links and pictures if you like. Also might be worth mentioning if you're starter has graduated or isn't fully live.

I think most people throw it out but waste not want not. I'll post my recipes in just a moment. I'd love someone to start a sourdough graduant thread 😂 I'm almost there

I’ve made one or two each weekend for the last couple of weeks. I bring the starter out of the fridge on Thursdays, feed it then and on Fridays and use it on Saturday.

Amazing, are the bubbles all nice and evenly dispersed on the middle m in so fascinated by it all. You seem to be a real natural if you're only new. How long does it stay nice and fresh???

This is one of the ones I made. Crust certainly not as crisp, but still edible! I find the wholewheat ones don’t rise as well as white.

That's looks great 😊 I would be well proud. I've the startings of a loaf happening tonight to bake Friday. I'll do most of the work tomorrow then let it prove overnight in the fridge 😬. I really want to make something but there's only two of us and we've still half a cinnamon cake left (still delicious). We try to be moderate and have little servings rather than big hunks of cake, plus there was a lot of cake! I would like to make cinnamon rolls for my husband, and pizza dough. I had a recommendation for a pizza recipe tonight

Hi I’m using the recipe for crumpets on the King Arthur site linked earlier. Today was pancakes. I’ll feed twice today so I can bake tomorrow - can my waistline take another day of pancakes and crumpets!

I looked in one of my tubs of discard yesterday and it's got hooch on top. I find this hilarious that I tried so hard to get my starter working now it's into overdrive 😂. I did read that if left too long the starter can take an acetone smell (like nail varnish remover?) so if it does that I would discard the discard. I think it means the bad bacteria has taken over.

I read of it happening to neglected starters lurking in the back of the fridge, long forgotten about, so I don't think it happens quickly. Something to be aware of I guess ☺️

So much to learn 🤓

Glad I found this thread. I have a starter on the go but was wondering if it was worth it, with the amount of precious flour I was using just to chuck it out! I made a few good wholemeal loaves but I couldn't get flour for a while. Now I've found some white bread flour I've reactivated it. I put a bit of honey in it and it's going great guns now Grin-I totally didnt read about how they made sourdough in the middle ages--

I just knew there'd be a lockdown sourdough thread! So good to find you all here. Started mine using the Hugh FW recipe and doing fine so far. Had a stash of spelt and wholemeal organic flour though so maybe that helped. Gave managed a few loaves ( white bread always easier isn't it Moose?) and hot cross buns. And lovely cinnamon rolls. Pancakes and crumpets were too wet I think but we made them early on. Will scroll through all your lovely recipes later Smile

Love seeing everyone's pictures, abs hearing the different methods. I've never heard of honey ah that's a new one on me
It's so interesting, I love soaking up information like this, such a food geek 🤓

I tried a loaf knowing my starter wasn't ready and it was predictably quite terrible 😂. Then I tried my first proper loaf with a starter than passed the float test (but sunk after 20 seconds 🤷‍♂️ ). Ill enclose both pics.

Need to find a new recipe for my discard baking related. I'm limited ingredients wise. Icing sugar is like gold dust but I have vanilla, bicarbonate of sofa, baking powder, sr and plain flour and sugar eggs and butter. Cinnamon mixed spice and nutmeg which I don't really like as a central flavour 🤮. My husband's not the biggest banana bread fab, and I'm eating the bananas so we've none gone black and stinky. Mind you I must hoke the freezer, there may be some in there.

@Myshitisreal The first loaf was suuuuuper dense and gummy. I thought that I hadn't let it prove long enough.

The second loaf I was so patient with it, thought I'd cracked it. But when I took it out of my 2nd proof from the cloth lined bowl it had gotten stuck to the cloth - so the top layer got ripped off. I tried baking it, just to see, and again it didn't rise and was dense/gummy.

One thing I noticed on both attempts was that it got a sort of layer on top of it during the first proof, which I can't figure out why.
