No jobs for mid-senior level: how to get around this?

Made redundant 6 months ago. Getting a lot of interviews but eventually getting rejected. Feedback is often concerns I'm too senior for the pay and will leave.

The issue is the roles are demanding the level of seniority I'm at , but offering nearly half of what they were before (even at the same company).

I have stated my previous salary and willingness to accept what they are offering but more than once the feedback is they think I will move on if a higher paid role comes up.

How do I get around this?

Lie about your previous salary.

Lie about your previous salary.

Won't they find out from previous payslips

In a large company payroll is in a different team and generally don’t share that info with HR/your line manager.

Is there a way to avoid saying what your last salary was? So many people I’ve interviewed have said they don’t know their existing salary. I’ve also been in interviews and just state what my expectations are around pay (instead of stating my existing, unless I was trying to use my existing salary to negotiate).

Just talk about your salary expectation for the role. Use ChatGPT or similar to help you craft your application/cv to match the job description.
