How to organise CV?

My first job was in retail, I was quickly promoted into a management/leadership role, then I took a head office move as a data scientist at the same company when I graduated. So I was with that employer for several years and mainly in the data science role. On a CV, do I need to list every position held between start/end dates or would it be ok to just list final job title? I just want to note the relevant roles.

My second employer was the civil service, again I was promoted multiple times during the years I was there - but spent the majority of my time at a senior position in data science. Do I need to add the early roles? Feel like it would read as repetitive.

Then finally, I started a consultancy role recently. I’m not sure how to add this to my CV. Do I put the agency or the client on the CV? Do I need to list the job title or is consultant sufficient? I’m enjoying the role, but I’m probably wanting to go back into permanent employment in 2026 so want to make sure I’m pitching it correctly.

Dont list them individually, but add a generic sentence that covers the non-relevant roles. EG
Retail Ltd - Jan 2000 - May 2009: Various retail positions including management.
Retail Ltd - June 2009 - Dec 2015: Data scientist. Role was to do x, y, z. Etc etc.

Same for CS.

Consultancy treat as a job:
Mumsnetter consulting: Jan 2023 to present: Self employed data scientist specialising in retail sector. Clients and projects include a, b, c.
