I handed notice in my notice face to face to my line manager. I sent an email so it was in writing and included my last working day. She responded email saying thanks, lovely working with you, the usual. That was six weeks ago. And when I mentioned my leaving date to a colleague, line manager admitted she hadn't actually read my email and they want me to stay past this date as it's taken them 4 weeks just to get my job advertised :/ I want to leave on the date on my email. By replying to my email my line manager accepted that as my last working day. What can I do?

You leave on the date you planned, as per your notice period. They can ask you to stay, but you don't have to agree to this. Legally you are free to leave after your notice period.

Entirely up to you. If you have another job or other plans stick with your leaving date. If you are willing you could stay on but you don't have to.

Your call. As long as the date you gave is aligned with your contract notice period, leave then or work longer if you want. Have you got a new job to go to? If so, don’t delay them as it will piss them off.

OP, it’s not your problem they haven’t lined up a replacement, you leave on the date you specified.

You could renegotiate your contract for the extra time. ie ask for more money. If they can’t be arsed keeping up with their emails (assuming your subject line had an appropriate headline), that’s a them problem.

Nothing ventured and all that. You don’t have to say anything if they ask why but you could say that you have plans and there is a cost to changing those plans.

As long as you gave the required notice stated in your contract then you just leave on that date. The rest is not your problem. You will have made plans either to start a new job or another chapter in your life so go ahead with that. Happens all the time that there is a gap between one person leaving and the new person starting, it’s no big deal.
