Help me decide my next job

I have 15 years experience as a special education teacher and a manager of a special education nursery. I am currently on maternity leave. I have handed in my notice for my full time demanding job and now have two options:

  1. Work as a childminder. Most parents I've spoken to want to pay cash in hand. The pay is low so cash in hand would probably work well. Would do this 3 days a week with my daughter. No need to pay childcare. No job security/contract.
  1. Manager of a part time special educational nursery. Very small/more relaxed compared to where I've worked. 20 hours over three days a week. I have childcare options for two days and then a grandparent would cover third day. Would be making very little after paying childcare but I'd have job security and better prospects for the future. I was offered this position during the week after three rounds of interviews

Help me decide? Am a single parent and want to make best decision for me and my child.

Option one involves breaking the law, so I'd discount that one.

There can be very good money in SN nannying if that's an option for you. Or working as a carer/PA for a person with additional needs.

You will need to be Ofsted registered and there will be strict rules and guidelines for
option 1. Plus you will be expected to have proper procedures in place for paying your tax. As PP says- doing what parents have asked would be breaking the law.

What are you even talking about? Just because people pay you in cash doesn't mean you don't have to declare the income and pay tax on it.

What you appear to be proposing to do is called tax evasion and it is a crime.

It's fine to pay in cash or be paid in cash. It makes no difference to your tax status.

What's a crime is failing to declare your income or pay tax on it.
