Job offer when waiting on restructure?

I have a job interview this week and whilst I'm well qualified for the rule of course there's no guarantee I'll be offered it! That being said, I do want to plan ahead what I would do if I was offered the job, due to my current circumstances, rather than just getting overexcited and saying yes when actually I'm not sure.

Interview at external org this week. I'm currently going through a restructure due to finish consultation phase end Feb. I have been ringfenced for a role within current org but no guarantees. I've also applied for another role, closing date 25 Feb so interview may not be til early March.

The interview I have this week is a longer and more expensive commute and I'm not sure yet how much flexibility there will be (current employer v flexible).

V v hypothetical I know, but I just like to be prepared- what would you do if they offered you the job but you have other irons in the fire, potentially?

you can only make decisions when they are available to be made. If your current employer is due to be restructured and you will know about those details end Feb, then there's no point jumping to any conclusion on that until you are presented with the details.

if you're going to the external interview this coming week, mid-Feb, then you'll get enough information at the interview to tell you if the role is in any way suitable, as flexible and opportunity for growth, to make an initial decision as to whether it's a goer or not. You may not hear about a job offer if there is one until the time you know about your new post in your current organisation.

if the external job is more difficult to commute to and may not give as much flexibility you have to work out if it's a price worth paying ie will your pay and reward compensate for that. Personally having done a long complex commute to an inflexible job, I wouldn't sacrifice that for an easy commute with more flexible terms and work conditions. Nothing buys reduction in work life balance!

your current employer's new job offering might come with a deadline for a decision to be received, so you need to factor that in too.

I wonder if we work in the same place. Timescales match!

In any case if you get offered new job they will expect you to have a notice period which buys you a bit of time.
Also in terms of making a choice, think about the culture of where you're leaving. What's it going to be like after the restructure? Change can be hard and toxic if handled badly. Do you want to stay to pick up the pieces?
