If you look at the UK Government's main 'Find A Job' page you can filter all the jobs by whether the organisation has signed up to be 'Disability Confident' (highlighted in blue) and also restrict to just those jobs that are fully remote (highlighted in yellow).
Presumably if a role is fully remote then its location is less important but you can also use the location filter for jobs that are reasonably near to you.
Of course not all the organisations who've signed up to be Disability Confident will currently have an opening but this page is where you can find the most up to date list of all employers that have signed up to the scheme. Let me know if you have difficulties in opening the file (I don't know if you have Excel or the free Open Office on your computer, if not I think I can convert the contents into a Google Spreadsheet for you). You could keep an eye on the vacancies pages of the employers you like the look of, or make yourself known to them.
I don't know anything about the charities involved in this condition but there's the ME Association and Action for ME (I'm sure there are other charities and support groups who can help). It may be worth contacting them and asking if they can suggest anything, possibly there is some sort of relevant recruitment broker scheme (I'm speculating!). Maybe you could start one!
Your council might have a Local Labour and Business scheme which you can sign up to hear about jobs. They also offer assistance in finding jobs, though I don't know if they have tailored support for disabled people (I hope they do!). This is the one for Greenwich, London.
From a wider networking point of view your MP may be able to help, or perhaps you might work together to put something local in place for people with ME/CFS and Long Covid among other conditions.
Jobs that spring to mind as being particularly remote-friendly include writing content for websites, uploading images and all that sort of thing. Possibly jobs that aren't listed as being fully or very remote would consider adjusting to reduce your commute / time in the office.
Would you be able to do customer service type jobs from home (strong telephone skills and high chance of people being grumpy at you so it's not for everyone and exhausting in its own way I think)?
I don't know about proofreading jobs or the 'Dict8' types of things (I think you need a particular qualification and some software but that might be worth exploring). Video editing? Though I imagine lots of people are chasing those jobs (there are lots of YouTube videos that can teach you, I use it quite a lot in my own job).
Also it may be that your request would garner some good information if cross-posted to the Mumsnetters with Disabilities sub-forum as well.
