Going to tribunal - employer says I'm right and won't defend

Can anyone help me understand what happens next ..
I wasn't paid at my last job, constantly late and in August despite lots of chasing and issuing a deadline to pay me by they didn't, so I quit with immediate effect for breach of contract
I filed with ACAS early conciliation, employer said they aren't paying me because I now work at a competitor and as such breached my contract (to be clear, i left before taking the job and only left because they didn't pay, additionally my contract states can't work for a competitor within 50 miles, my new employer is further than 50 miles but they claim it's 50 miles of the UK!!!)
So I file for tribunal, employer comes back to say my claim is correct, they won't defend it, won't appear in court....
So what happens next? Do I still submit all my evidence?
If they refuse to show...what actually happens?!

Unless your ex-employer agrees to settle with you out of court, you will apply for a default judgement. You won't need evidence as the court doesn't need to make any findings of fact. Your employer has admitted you are correct.
