New starter paperwork and NI

I've just started a casual job in a cafe. It was advertised by a 'Staff Wanted' sign on the door. I've never done this kind of work before, have always done office/admin work.

I've been told it's minimum wage so that's £8.91 in Scotland and will be £9.50 from 1st April. The hours are a bit ad hoc but they say they can give me between 15-20 hrs a week. The owner said they'll pay my NI. I gave them my NI number and bank details.

It's all very casual and it's just a small privately owned cafe, nothing fancy. Should I expect a contract or anything in writing? Do I need to do anything from my end as far as HMRC is concerned? Whenever I've worked in offices I've had to fill out a Starter form for HMRC that I've forwarded to the company's HR department. Usually those jobs have been much better paid and I'd be liable for tax but with this job I'll be lucky if I earn more than £11k a year.

I'm hoping to do a bit of a self-employed side hustle alongside that will hopefully earn me something in the long run, and would declare that as self-employed income (if I actually make any money!)

I just want to make sure I'm doing everything by the book and that I'm making some NI contributions. I'm assuming that I won't get sick pay or holiday pay and it's not been mentioned.
