Where do you put the slightly random stuff on your CV that doesn't fit elsewhere?

Just that, really.

When I was more junior I had a "hobbies and interests" section at the end that mentioned teams I was in, etc. Took that out two jobs ago and focussed on work achievements. Now I have non-work things that I'd like to include, but not sure where they should go. I'm thinking of things like being a school governor, or membership of relevant societies/organisations.

Do you mention such things on your CV and if so, where/how?

Unless its relevant to the job, or your CV is exceptionally thin, "hobbies and interests" don't really belong on a CV, IMO. School governor should be listed as a role, if the experience is relevant. And you should have a separate section for memberships that are required for the role.

If the experience is relevant and might otherwise be overlooked (eg work as a school governor), then you could always draw attention to it in your covering letter.
