How to prepare a quote?

I've just set up a business baking from home. So far I can very easily tell people how much things cost, as they have small, local orders.

However, someone has now asked for 2 quotes for large orders to London (I'm in the north west)

I have all the prices for her, but I'm wondering is it better to give a quote broken down into elements, eg:
cakes £XX
packaging £XX
transport £XX

or just quote her one lump sum?

Any opinions? Thanks in advance.

If you give a lump sum, then it will be difficult to change it if one of the elements changes dramatically.

If you break it down, then if one of the elements chnages massively (eg: eggs go up a lot), then their may be room for negotiation.

That's what I was thinking. I'm offering her some options, eg: plain ribbon or printed, so if she can see the breakdown of all the costs, it will help.
