Well this is really concerning, because it tells me that if I get into trouble at work for, e.g. not wanting to declare my pronouns, ACAS will not help me. When their job is to help me.

Interestingly, their website says this:

“Protected characteristics and discrimination

We're updating our advice on gender reassignment, marriage and civil partnership, sex, and sexual orientation. Our general discrimination advice above is relevant for all of these protected characteristics.”

Hopefully, they are taking advice from organisations who won’t misrepresent the legal position.

And How the fuck are employers going to be aware of which people go through the menopause if the educators can’t even bring themselves to name who those people are?

Well... in practice, everyone actually knows it's women, and only women, who go through the menopause. I doubt anyone will be seriously confused by this silly document, but it does make ACAS look idiotic and not interested in maintaining women's rights.

doesn't this directly breach laws around GRCs? They want to know which people, however they identify, have female bodies? How very terfy.
