I'm looking to get clued up about gut health, diet myths, and how our bodies process food and junk. Any recommendations please?

Dr Chatterjee. Although the title mentions weight loss he explains very well how the body processes food and also how important other factors are.

I found Why We Eat (Too Much) by Andrew Jenkinson very interesting. He talks about genetics, social and cultural factors in metabolism.

two great recommendations above I would second: Why we Eat and UltraProcessed people.
both the authors have featured on lots of podcasts so you could listen to them prior to purchase.
I would also recommend Tim Spector, Food for Life, although there is a lot of debate about the blood sugar issue and whether it is really as central for most healthy people as he makes out…..

Where is the debate about blood sugar? I've not seen it.

@Happydays321 a lot of Tim Spector’s work is around blood sugar spikes - linked to his Zoe project of monitoring this on people via arm monitors and an app on your phone.
there’s been some criticism that most people (eg unless diabetic) don’t need to be quite so concerned with this in detail.
lots of other aspects of his book were worthwhile reading I thought - a lot of interesting stuff about gut microbiome!
