Naomi Novik Uprooted is my absolute favourite. Spinning Silver not quite so much but also very good, and her Temeraire books are great but quite different.
I get books when they are on Kindle 99p deal. Recently read and enjoyed The Lost War by Justin Lee Anderson, and Strange The Dreamer by Laini Taylor.
Also V E Schwab A Darker Shade of Magic trilogy and the Lies of Locke Lamora (the latter quite dark in places, but brilliant - I couldn’t get into the sequel quite so much).
I have a soft spot for The Black Witch and The Iron Flower by Laurie Forest - YA and rather teen romance in places but some nice world building and lots of side characters made interesting.

Also N K Jemisin Inheritance Trilogy, although I’ve only read the first two and a bit of the third.

Dragonlance chronicles (start with the main trilogy). It doesn't read at all like dnd if that's offputting.

Have you read any Discworld books? If not, start with Wyrd Sisters or Guards! Guards! and see if it grabs you.

If you fancy urban fantasy, Ben Aaronovitch's Rivers of London series is brilliant. Jim Butcher's Dresden Files is generally good but the latest one is terrible.

Try also: Neil Gaiman's Stardust, Neverwhere and American Gods; Natasha Pulley's beautiful The Watchmaker of Filigree Street and its sequel The Lost Future of Pepperharrow; the Rotherweird trilogy by Andrew Caldecott, and Robin Hobb's Farseer trilogy.

Daughter of the Empire, servant of the Empire and Mistress of the Empire trilogy by Raymond E Feist and Janny wurts
Magician by Feist (both in same universe)
I dont normally like fantasy but loved these.

I’ve been reading Charlotte English - not epic fantasy, but good characters and excellent world building.

A couple of older series I’ve enjoyed have been The Greenstone Grail and Prospero’s Children by Jan Siegal (aka Amanda Hemingway). Two different series, but equally well-written.
