Anyway, I have been doing the above for two weeks now and feling great, but would love some more inspiration for meal times!

Please could others doing this post their meal plans for the week and hopefully we can inspire each other?

Sorry for bad spelling, DD is having a wobbly here and pulling my hair at the same time so can't concentrate!

notasize10yetbutoneday · 21/05/2010 08:00

Mummymels I can get celeriac in my local larger supermarkets but not the smaller ones, also I find there are more of them around in winter than summer (I think its a winter vegetable). If you ask at a large supermarket they should be able to help i would think.

DavidHameron · 21/05/2010 10:16

Celeriac is the root of the celery plant so should be around in the summer! It looks like a swede but with knobbly bits where the roots have been chopped off. You can often get it from online supermarkets, and farm shops near us seem to have loads...

BecauseImWorthIt · 21/05/2010 10:25

Sainsbury's always stock celeriac.

You can also make a lovely dauphinoise with celeriac - slice it really thinly, chuck into a shallow oven dish with 3-4 finely chopped cloves of garlic, salt and pepper and then pour single cream over it, cover, and bake slowly for around an hour till tender. You can sprinkle grated cheese on top if you wish, and then brown this under the grill.

I usually make ordinary meals and just leave out the carb element for myself.

If I make spaghetti bolognese, I substitute finely shredded white cabbage for the spaghetti - boil it till it's soft. It's obviously not the same, but it adds bulk and makes it feel more of a meal than just a dollop of bolognese sauce!

Great thread!
Thank the lord for BBQ weather I say!
Tonight we had chicken in Nandos Piripiri marinade = 2 carbs per serving I think. Also tomato, basil and mozzarella salad. Yum!
Atkins choc bars are great for a snack too.

faithnomore · 27/05/2010 22:13

Bumping and thanking for ideas. 2 recipes I've tried this week, one v quick, other needs time to stew:

Meat in cream sauce: Fry mushrooms (tho the 15g portion as suggested by Atkins is TINY) and chopped spring onions, then add meat, e.g. pork chop, and fry both sides; when almost done add cream, capers (only 0.1g carb/tbs and help cut through the richness), s&p, bit of mustard if you like, bubble up, squeeze of lemon juice (optional), serve over dressed salad or cauliflower. Have also cooked some bacon until crispy before the meat stage and crumbled it in for more texture and saltiness!

Beef stew: Brown some cubed casserole beef in oil. Remove and fry off 3 sticks chopped celery, one chopped pepper, 5 chopped spring onions. Add beef back in, thyme, rosemary, chopped anchovy fillets, pepper; cover with water and cook until very reduced and the beef falls apart, making more of a thick sauce (about 3 hours). Season and thicken with some cream.

notasize10yetbutoneday · 28/05/2010 08:52

Yum, they sound nice faith. The meat in cream sauce sounds like a stroganoff, i had something similar on a bed of spinach with some broccoli last week.

I haven't finished my menu plan for next week yet but definitely on the menu is:

  • moussaka
  • duck legs with mango/orange salsa and salad
  • seabass fillets with ginger and spring onion on pak choi (had this in a restaurant last week and it was gorgeous)
  • other fish topped with pesto, baked in oven with ratatouille type sauce

Also DH, who is being really supportive of me low-carbing, bless him, made this last night and it was absolutely gorgeous. We had it with green beans.

Some great ideas on here.

I am just starting out but the next couple of days I am planning

  • moussaka
  • asparagus with ham
  • salad with shrimps

I seem to be relying on meat with salad a lot so will try out some of the recipes.

notasize10yetbutoneday · 02/06/2010 14:21

I wanted to share this recipe which I made last night which was sooo quick and easy (I used one of those ready-roasted chickens) and really filling, I did new potatoes with it for DH but he said he didnt realy feel like it needed anyhting extra.

I used the rest of the chicken to make coronation chicken salad for lunch- chicken mixed with creme fraiche and mayo, fenugreek and tikka powder to taste mixed with a skinned diced peach.

It was yummy if I say so myself.

Going out for dinner tonight but I've checked the menu and will have scampi and a salad- about the lowest carb thing i could find- its Frankie and Bennys!

My weight just ain't shifting and I've just spotted your thread. I have polycystic ovaries and need a diet to help - does this really work? Do you still feel hungry? Do you feel better for it?

notasize10yetbutoneday · 02/06/2010 15:40

God, sooo much better for it. people keep saying 'don't you miss bread? Dont you miss pasta?' but I really don't because instead of missing them I just think how bloated, sluggish, tired, lacking in energy, mood-swingy I was in comparison to how I feel now. Dh has never been bothered when ive gone on diets in the past (usually cos they only lated 5 minutes til I got bored) but he is so supportive of this because he can see Im a different person on it.

I started this maybe 4 weeks ago now? Size 12, pushing a 14 on a 'fat' day. Now my size 10 skirts fit comfortably. I havent been weighing myself regularly although i lost 3lb in the first week, but then the scales broke (not by me!) and I havent weighed myself since.

I can honestly say I have NEVER felt hungry after meals. If I do feel peckish I have a handful of cashew nuts or a babybel. Or a slice of ham or something if im near the fridge.

I would say, give it a go for a week and see if you fel better for it. You dont need to buy anything special for it except lots of veg and salad and eggs/meat.

msboogie · 02/06/2010 21:34

I agree. You do feel better - one of the best things is the immediate loss of bloating - it can take loads off your inch measurements. Carbohydrates are stored with water in the body - if you drop the carbs you drop the water.

I had a nice silver ring that DP bought me for Xmas one year - had never worn it as it was too tight. After about a week with no carbs it was fitting perfectly.

You can go as low carb as you want (I have almost none but I needed to lose weight fast) or you can just have no bread, pasta, anything with wheat or sugar (cakes etc) and eat normally.

You can carry on cooking normal food for the family and just give yourself no potatoes/bread or whatever and more green veg or salad.

It does work and you should not ever go hungry - its protein that fills you up.

ItalyLovingMummy · 03/06/2010 19:43

Thanks, I will definitely try this out. I also agree that with carbs I feel moody and sluggish, so def worth a shot. If I even look at a cake I may as well just stick it to my thigh quite frankly! I will cook regular meals for my DH and DS and just cut the carbs for myself.

thereistheball · 03/06/2010 20:12

Great thread. Here's what we've had recently:

Enchilada-spiced steak with home made guacamole and steamed asparagus

Roast chicken with green veg; leftovers done in cream, with mushrooms and a huge dollop of tarragon mustard with green beans

Salade nicoise (no potatoes)

Picnic - antipasti (often have this for breakfast too)

Burgers without the bun but with all the trimmings: cheese, bacon, mushrooms, tomato, red onion, lettuce

Spinach and feta fritatta

Duck breast marinaded in soy, ginger, orange juice and chilli sauce, served with fried courgettes

ItalyLovingMummy · 03/06/2010 20:23

Great recipes thanks, will try most of these.

msboogie · 03/06/2010 21:29

wow fab ideas whereistheball

Sputnik · 03/06/2010 21:30

Today I had asparagus soup made with just asparagus, veg stock, lemon zest and a little cream. Had it with cheese. Last night grilled aubergines and omlette, night before grilled sea bass and home made tsatziki. Can't remember much beyond that! For lunch almost always salad, different every day. I used to have eggs for breakfast but got a bit bored, now usually greek yogurt or and handful of almonds and a chunk of parmesan.

msboogie · 03/06/2010 22:05

sounds fab sputnik. Don't the people on this thread eat well!

I have just had a spinach (whole bag of spinach) omelette with marks and spencers cornish cruncher cheese with balsamic onions melted on top.

yummy

MarvelousNonPerfection · 03/06/2010 22:10

Salmon on a bed of mash cauliflower (with a splash of double cream)

Salmon on a bed a shredded cabbage with soy sauce.

Sputnik · 03/06/2010 22:25

Another thing I often do is chop some veg into an oven proof dish pour a little cream over then sprinkle with ground almonds and bake. Works really well with fennel, radichio, spinach. Aubergines too but you have to fry or bake them a bit on their own first.

iamamug · 04/06/2010 14:33

I have a two egg omelette every day for breakfast with onion, peppers, mushrooms and ham and sometime cheese.
Keeps me going easily until lunchtime - sometimes have to force lunch down as really bad to miss meals!
Lunch is usually salad - chicken or prawn& avacado - lots of green leaves, cuc, spring onion etc - home made dresing with olive oil & raspberry vinegar and a large dollop of mayo.
Never get bored of it.
Dinner varies hugely but usually chicken/steak etc made with nice creamy sauce and lots of leafy veg.
I love pan frying shredded cabbage with lardons - very tasty. Spinach is lovely with nutmeg and a bit of cream.
I have done every diet going and nothing beats this - you will never be hungry and the weight loss is steady.
Oh - don't forget at least 2.5 to 3 litres of still water every day - speeds the weight loss incredibly - if I don't have enough water i can tell!!

desiretochange · 04/06/2010 15:37

Always complaining of having no energy, so going to give it a go at giving up bread, pasta, rice and potatoes and see if that will improve my energy levels :]

thereistheball · 04/06/2010 19:28

Desiretochange - it is also worth giving up sugar. That's what carbs convert to in the blood (hence notes on nutritional information on food packaging which state 'Carbohydrates.. which sugar...). You can substitute Splenda in cooking if you must but you can still have double cream, v dark chocolate (and once you've given up sugar for a few days you start to taste the inherent sugar in things, so you realise that it is sweeter than you think it is now) and some fruits - melon and berries are best. If you have been feeling sluggish it's not simply about eating rice and pasta, etc - it's about the sugar rush and then crash that you experience after eating, that will happen even if you avoid all savoury carbs but still have a sorbet after lunch.

I always feel better eating like this, whether or not I'm losing weight. I was diabetic when pg and know this is the only way of eating I can sensibly follow for life.

thereistheball · 04/06/2010 19:30

Ps - tonight we are having pesto chicken salad with mini mozzarella balls, tomatoes, and asparagus.

msboogie · 04/06/2010 21:59

that sounds yum thereistheball - very light summery food.

I had GD as well but managed to control it with diet -I think I would easily be able to live like this permanently and hopefully prevent proper diabetes developing...

I must confess I am not drinking enough water though - must drink more!
