I am early 40's and struggling with energy and motivation. I love my food obviously, so not sure which weight loss method would be good for me!

Do you have a fitbit or similar watch tracker?

That for me was an eye opener as turns out I don't need anywhere near 2000 calories a day! I burn on a good day between 1500-1600!

I then used my fitness pal to work out what my calorie intake should be and combined that with intermittent fasting each day. I lost 3 stone in 8 months that way on 1200 calories. The last stone was very slow (about 4 months!) But now aiming to to lose another 6lb after maintaining for 3 months.
I increased veg and protein portions and no calories after 7.30pm.

I can't do much exercise due to a long term health condition but do what I can with walking (I'm 38).

I would say you need to work out what works for you and fits into your lifestyle to make it long term and sustainable.

Im mid 40s and cant exercise due to disability. I used a combination (last year) of calorie counting (after I realised how little I needed) and fasting (16:8-20:4 varied depending on what I was doing).
I still do it now to maintain. I went from a 16 to a 6. I found this the easiest way to do it because knew it could be a long change in my diet, but also it's flexible. If you use your calories over a week and go for coffee and cake that's OK because you just make sure your under calories for a few days to even out. It also allowed me to eat what the family were eating (just a smaller portion).

Unfortunately I cannot wear a smart watch for work, so tend not to use it. I was looking at fasting.

Knocking carbs on the head is the only thing that works for me

You might still be able to work it out via my fitness pal as you put in your current weight, target weight and your level of activity so if you know your job involves lots of movement then your medium to high activity and it will give you calorie level to aim for.
