First @lemonaaade you need to be clear about what you mean! Keto is (or should be) the most strict way of low carbing, so you're only allowed 20g carbs a day (which is very low).
So do you mean low carbing rather than keto? There isn't a specific definition of a low carb diet, although generally anything under 50-100g carbs per day could count - it's hard to be more specific as people have different tolerances to carbs.
Second, whichever approach you're taking, you really need to read up about them and understand what they entail - and what you can/can't eat. As @ShortLass has said, The Diet Doctor is a really good place to start.
Alternatively, you could head over to the Low Carb Bootcamp topic and join us on the latest Bootcamp. We're 2 weeks in, but that doesn't matter - you would be welcome to join us.
To answer your specific questions, if you were on Bootcamp then:
do I count calories on keto? On Bootcamp we don't count calories or carbs - just follow the 10 rules and it will work for you
can I eat full fat meats or does it need to be lean meats only? On Bootcamp - and indeed any other low carb plan - you should be eating a lot of fat. It's a high fat, medium protein, low carb approach. No 'light' or 'lite' anything!
can I drink alcohol or shall I cut it out for a while? On Bootcamp your first two weeks (of 8) should be alcohol-free. After that, you can reintroduce it - in moderation. Dry wine and clear spirits with calorie-free mixers only.
