Diet insomnia paradox

I've never been a good sleeper, and over the years I've learned that if I don't eat enough I simply won't sleep. Obviously eating enough and having supper before bedtime was enough in the past to get me to sleep.
However as I entered my 50s, my metabolism slowed and I put on an unhealthy amount of weight. A reduced calorie intake along with exercise was required. Here's where things go wrong. As soon as I put myself into a calorie deficit, I suffer with insomnia. The lack of sleep means I don't have the energy to exercise. Because of the exhaustion I don't have mindset to plan and prepare healthy meals so I end up eating bad foods, fatty and carb rich. The weight piles back on.
How can I find a diet that lets me lose weight and still sleep? Even if I try healthy options such as protein and bananas before bed I might get to sleep but I'm awake by 04.00am.
Anyone else find dieting stops sleep? Any suggestions?

I found cutting out evening carbs prevented good quality sleep. I now eat largely protein and fat for breakfast, salad with healthy fats for lunch and a larger evening meal at 6pm with carbs, protein and veg. My sleep improved and weight loss continued.

I also do not count calories to loose weight as you do just lower your metabolism and I want any losses to be sustainable long term. I ensure I stick to whole foods with very little sugar and no starchy carbs with just the one portion with my evening meal. I try to ensure they have been cooled and reheated to increase the resistant starch.
