I’m struggling to lose weight because I am rubbish at thinking of nice but healthy meals. also no thyroid so can take a bit of time for things to start moving.

I am a nurse and work in health centres - rarely the same one so not often places to buy anything, and I want to bring food that I choose which is filling/healthy. I would take breakfast and lunch.

Breakfast I thought yogurt and fruit, no heating up facilities and I don’t eat cereal due to milk intolerance I only like oat milk in tea. Anything else I could try? Not sure about overnight oats.

lunches need to be cold and no heating up facilities. Salads but how to make them a bit more interesting I just seem to have a mental block with this.

dinners, I like all meat/fish veg think probably smaller portions nothing very spicy - crohns . If anyone has any tasty meals I’d love to get some inspiration. Thank you 😊

I wasn't keen on overnight oats either, total convert now. I'm in extreme calorie deficit (50+, short, with a lot to lose) and focusing on protein and volume eating. I sometimes add cookies & cream flavor protein powder to my oats + toasted seeds, fresh fruit. Keeps me sated way beyond lunch. Also a fan of Lindahls Kvarg pots, passionfruit & peach especially. Add some toasted seeds for crunch. V filling.
My favorite lunch time salad is boiled egg + tuna + iceberg + tomato + red onion + zero calorie dressing. Or wafer thin pre cooked turkey instead of tuna.
I have normal dinner with the family, just smaller portions & focusing on protein.
Also, I know everyone say so, but it really works: Lots of water with every meal, and good supplements.

P.S: Another obvious one but it's really changed the way I snack: I boil 10 or so eggs, peel them and keep them covered in the fridge. Good for 4+ days and so handy.

Thank you @VanellopeVonSchweetz99 I will give the overnight oats a second chance I literally am falling to bits, my knees are terrible so I really need to get some weight off them. I’ve just got yogurt and fruit today as I wasn’t very organised last night but will pop to the shops on my way home from work to get eggs etc and find a recipe for overnight oats🙂

Try Huel for breakfast - its 400 cals and 40g protein, its vegan, you just mix two scoops powder with 400 ml water and some ice, shake it up, put it in the fridge overnight, grab and go in the morning. I put a shot of coffee in mine. Keeps me going till lunch as its so high in protein.

I do love overnight oats as well. So easy to make, and filling and nutritious. Hope you find recipe you like.

Overnight oats = 1 part oats to two parts oat milk. I add collagen powder and a spoonful of chia seeds. Then eat with fruit. Frozen berries work well, if I take some out and put in a pot when I make up the oats they're defrosted and good to go in the morning.

Salad - bulghar wheat/quinoa, roast mediterranean veg, along with grated carrot/chopped tomato/ anything else you fancy and a couple of falafel. Chunk of lemon or lime to squeeze the juice and dress it just before eating.
Spoonful of toasted seeds is a nice addition.
The grains and roast veg keep for a few days in the fridge and just make it up every night.
