Inspired by the tread on AIBU which has been deleted. It was a great thread despite the bad starting tone.
The podcast referenced here:
Addicted to food

It says that not all calories are equal. Our weights have got out of control since the introduction of mass production of convenience food in the 60s. Brazil has categorised food which should be avoided as a category 4: ultra processed food.
There have now been loads of studies that suggest it works even I'd they don't pinpoint the reason for the problem with processed food.
I have been thinking of giving this a go for a few years even though it doesn't sound easy at all. Now feels like the day!
I will cut out bought lunches and sauces but I won't be able to cut shop bought bread.

Is anyone else going to try and what will you cut or keep?

I've given up UPF, inc bread, and feel loads better for it.
I borrowed a friend's bread maker to help me use up some flour. I wasn't at all impressed with the result - whole meal as dense as a brick. I was disappointed as I'd hoped it would be a solution to UPF bread, and that is buy my own bread maker afterwards.
Does anyone have a good recipe I should use to give the bread maker one last try before handing it back?

Ooh thanks @BarryKentPoet missed your post!

picklemewalnuts · 09/06/2022 13:30

@Kerrrmieee cornflour as a thickener is ok, I believe. As is any vegetable.

I now cook onion, a potato, celery, carrot, parsnip etc under the roast, and blend it all to get gravy. It seems to work.

Kerrrmieee · 09/06/2022 13:33

@picklemewalnuts ooh that sounds lush thank you. Been meaning to get cornflour for ages, never at the forefront of my mind when frazzled in Asda.

It's a pretty simple idea really, it's booze n crisps for me that are my downfall. Had homemade burgers last night - lovely, need to find an alternative for my rolls, or source better than Me Warburton!

Breadmaker: hopefully it is a Panasonic
Follow the included recipe not breadmixes.
Try a 75%/80% wholemeal loaf (the rest strong white flour) - 100% wholemeal can be really dense.

BigBobBoots · 10/06/2022 17:25

@NotMeNoNo - it's not a Panasonic- maybe that's the problem

If you WFH, making bread can be done without a bread maker and simply. I add ingredients to a mixer for 5 mins in the morning. Prove for 2 hours. Knock back and prove for an hour. Cook for 30 mins. Only about 10 minutes of my time in total.

It should still be ok if you follow the recipes. I'd start with a white loaf, good flour like Allison's, and then a 50-50.

Sadly supermarket 'bakery' bread is also on the naughty list. Apparently it is usually made a year before then frozen. The only baking they do on site is a quick toast to brown it. The reason they do it is because the 'baking' on site means they are not obliged to list the ingredients!

Chaoslatte · 17/06/2022 18:59

You can find the ingredients for many supermarket bakery items online if they offer that item for delivery @belltenthelp Smile We had a delivery of Sainsburys organic wholemeal bakery bread this morning and the ingredients are on the website/app.
