Ideas please - cheap easy diet meals for one

I wonder if anyone could recommend a book or website for budget diet meal ideas for breakfast, lunch and dinner. For background, I am 64 years old and have been told I am pre-diabetic and have high cholesterol and need to lose around three stone. I have been eating very badly for the past three years since I’ve been on my own and haven’t really cooked apart from the off scrambled egg and mostly just eat sandwiches and crisps. I really need to put my mind to losing weight and any tips would be greatly appreciated.

Soup - make a big pot and have it for lunch for several days. Faves here are lentil/cauliflower/squash. To stave of boredom eat with different toppings e.g. crumbled feta, herbs, sprinkle of seeds, chilli flakes, parmesan, croutons, kale crisps.

Frozen fish fillets (get whatever is cheap) baked in foil with a bit of oil and lemon/lime juice, garlic, chilli flakes, serve with green veg, maybe noodles or rice too.

Daal - I do a large portion of Madhur Jaffrey's basic recipe which is really delicious and super cheap. Eat that for dinner a couple of days a week with a tomato and onion salad, a bit of yoghurt or some naan. Maybe not the same day as the lentil soup 🤣

Omelette with tons of herbs and a bit of parmesan.

Fritatta, again can make a large one and portion it out, great with leftover veggies, you can add ham/bacon if you have it, potato, peas from the freezer. Serve with a salad.

Beans on toast!

Do you have an aldi or something nearby. When my dc are with their Dad I am too lazy to cook. I often eat the aldi finest tomato and lentil soup, a packet of something called spanish grains microwave for 2 minutes and it's lovely. Similar things with 2 minute lentils. All less than a quid, filling and under 400 calories

Muesli and yoghurt for breakfast as very filling.

Fish/ chicken or eggs for protien.
