At loss... With weight loss

So here's the deal and my challenges:

I have three kids - baby number 3 is 8 months old. I have a fairly poor mental health and not a lot of money (because of maternity leave). I also find that I have very little time/energy. I am a coeliac so everything needs to be gluten free. I hate all exercise apart from walking. But I need to lose weight and be healthier. I can eat absolutely massive portions. I am always hungry. However counting and tracking gives me anxiety. I know everything sounds like an excuse but I'm just listing the challenges and I DO WANT TO change.

What way of eating (diet, even though I hate the word) would you recommend for me? The simpler the better. And I wouldn't like to go hungry or eat bland food (I like well flavoured or spicy things.)

Try 16:8- eat nothing for 16 hours and normally for 8. Eg fast till 11am, breakfast, lunch at 2, supper at 6, fast from 7pm till 11 the next day. Lots of info in the fasting section!

How much weight do you have to lose / would you like to lose?
I didn’t used to like exercise, but it’s much easier once a bit of weight comes off, firstly because you’re physically lighter, but secondly because you’ll have more energy. I used to drive to my nearest shops, even though it’s only a 15 minute walk. But now I walk.

There are lots of little changes you can make without being too drastic or counting and weighing everything.
For example:
Switch white bread and pasta to wholemeal, or at least half and half.
Have a look at some images online of what is considered a ‘portion’ of rice, pasta etc and try and have that much, even if you don’t want to actually weight it.
Increase vegetables, so have a third of your meal as protein (chicken, salmon, tuna, eggs etc), a third as carbs (rice, pasta, quinoa), and a third vegetables.
Cut down on sugary drinks or sodas.
Drink more plain water
Reduce the amount of junk food you buy in the first place, so crisps, chocolate, biscuits, cakes. If they’re not in the house, you’re less likely to binge on them.
Reduce takeaways to once a fortnight, or even less.

Being “always hungry” might just be because your blood sugar is spiking, for example if you have a chocolate bar, you’re making your insulin spike and then crash, so you think you’re hungry not long after. If you eat 3 nutritious meals, you shouldn’t need any snacks in between.

Walking is a great start - are you doing this already? Problem is you’ll need to walk a few hours to burn a decent amount of energy, so when you do it, do it at a brisk pace, but know that it’s mostly diet that will make you lose weight.

That does sound tough, I have an Aunt who is coeliac it can be tricky. You might like things like smoked mackerel, frozen fish, tinned fish all can be cheap but high protein and therefore very filling. Again high protein and filling is chilli, I love spicy chilli without rice. Stir fry with lots of chilli, ginger, onions, garlic, very satisfying as it has a great kick of flavour.

I’ve realised that to lose weight, I am going to have to go hungry. I’ve been losing weight slowly but steadily - half a stone since the new year. I have basically cut out breakfast 5 days a week, and have what i would have had at breakfast for lunch instead. Fri night through to Sunday night I eat normally. It’s slow but sustainable.

I'm a coeliac too and sound similar to large portions etc. Have been heavier than I'd like for years now. In January this year I spotted a reference on Mumsnet to the low carb bootcamp and something clicked in my head - I started on January 17th and have lost 19 lbs so far and still making good progress. Worth a look at the topic. I hope you find what works for you!
