I've tried Cook pots the under 400 Cals ones which are nice, would prefer more veg though.

Anyone tried anything quick and easy and under £5 per lunch?

If I'm prepping it has to be ultra easy, working at home means I'm tempted to just eat toast and crisps or anything close range!

I have a freezer stacked with individual boxes of leftovers . I take one out the night before to defrost then give it a quick ping at lunchtime . Tomorrow I’m on homemade vegetable biryani .

Yes, batch cooking. Packet of soup with some crackers, not quite as healthy....
A veg omelette or scrambled eggs.

I like Bol soups and veg pots. Had the jackfruit 'chicken' soup and it's amazing. I think it's 380 calories for the whole pot.

Buy bags of pre trimmed green beans, baby corn, asparagus, sliced mushrooms, sugar snap peas.

Handful of each in a big bowl, couple of tablespoons of water and loosely cover then microwave for 3 minutes.

Drain the water off, teaspoon of butter, tear up some wafer thin chicken or ham, pepper, garlic salt or whatever seasoning you like and a good stir.

It takes less than 5 minutes and is tasty, satisfying and about 250 calories.

If you have that selection of veg and a pack of wafer thin meat then you'll have the supplies for 3 days worth of lunches and it would cost about £8 according to the Tesco website, less if you have a Clubcard and do the offers.

The John west lunch on the go meals are delicious (though they are better spooned out onto green salad as they don't look great ). There are different tuna flavours and a Moroccan salmon one which has slightly more calories but they are well balanced and tasty.

I am very boring - I have a tin of soup! Most days.

If I am feeling adventurous I have chicken, bbq sauce and lettuce in a mini wrap

I used to just chuck a whole bag of frozen mixed vegetables into a pan with a splash of water and salt and pepper (or steamer attachment that goes over the pan) for ten minutes and fry two eggs to put on top or mix a tin of tuna/ herring in ... either that or porridge. More 50p to £2 (£2 for tuna) a meal than £5.

Look up Muscle Food. We get meat delivered from them, and they also do savoury lunch pots which work out to be less than £2.50 each if you order 10. Not tried them but heard they nice and they have loads of protein and fibre.

I'm too lazy for that with most of my omelettes. I'd use tomatoes because I can zap them in the micro before putting them in the omelette, but mushrooms would need to be fried in a separate pan and that would take more time and more washing up. Yes, I know I'm lazy.

@Gwenhwyfar I wouldn't use a separate pan. Bit of spray pipe and sliced mushrooms and tomato into pan while I break and mix the eggs, eggs straight on top of the veg then spinach on top of that. Flip when the bottom is cooked or if you can't flip whacking under the grill to cook the top. All in 1 pan and about 3 minutes of cooking.

Cottage cheese with chopped veg.
Cold chicken with salad
Tinned fish (e.g. tuna, salmon) with salad

Also, if you make something such as a curry, stir-fry or bolognese for dinner; make enough to cover a smaller lunch portion the next day - pop it into a bowl so all you have to do is microwave for 5 mins (or eat cold depending on your mood).
