Please share your cauliflower rice secrets

I am trying sooo hard and need to substitute something for rice/pasta and I usually hate cauliflower rice.

At lunchtime today I added some soy sauce which helped, but wondered if anyone had any other good ideas?

Fry onions and garlic - lots of it. Fry red pepper strips until they blacken a bit on the sides. Fry some mushrooms. Remove all from pan, then fry chicken strips. Add everything to the pan with microwaved cauliflower rice. Add a few frozen peas (the low carb police will kill me for that) and lots of soy sauce.

Oh also if you have chorizo then add that to the chicken once it's cooked.

Or you can use salmon - cut into strips before frying, or microwave it and add to the cauliflower rice at the end.

Never ever microwave it - stir fry it, ideally in butter, plenty of black pepper. Learned that from the low carb bootcamp threads!

Make egg fried 'rice'.

I make thin omelettes (usually two to serve three of us, so one egg per omelette) then roll them up and add to the wok just before serving.

Chop an onion and fry in a wok in groundnut or sunflower oil until softened and starting brown. Add some frozen peas and fry till they're defrosted, then add the cauliflower. Season with a bit of salt and some pepper and stir fry for 3-4 minutes.

Then a good sprinkle of good quality light soy sauce, and add the strips of omelette.

Can also garnish with finely chopped spring onions.

And of course you can add all manner of other things to make it more of a meal than a side dish if you want, such as cooked chicken, or prawns.

Fried rice - fry chopped up bacon medallions, onions, add the cauli rice, beat an egg and stir in, add soy sauce et voila! Really good with satay chicken etc. I'm a big fan of the WW recipe books, lots of good ideas there. There is a lovely fish pie with cauli rice on top instead of mash, add some low fat cheddar and it's really good.

To go with curry stir fry with a bit of tumeric or whatever spices you like and add dessicated coconut and salt and pepper, delicious!

I just boil and mash cauliflower and eat it6 as abase for curry, chilli and stirfrys. If the topping is nice and spicy you get to find this almost normal after a ;couple of weeks.

I do this too. I like it better than cauliflower rice, even with all the additions.

When I was on a keto diet, these were my top tips:

  • oven bake the cauli so it looses some moisture. Never steam or boil, as it will become a sloppy/wet mess!
  • Oven baked then topped with a drizzle of tahini and sesame seeds is a delicous side. You could also sprinkle on cumin or sumac if you like those flavours.
  • Oven baked, then either finely chopped or a quick blend in a processor worked for me. I always had it with another dish though- Thai or Indian curries etc to add flavour.
  • You can also buy steam bags of cauli rice from most supermarkets. I found them to be a quick alternative when I was short of time.

I always stir fry it with some seasoning (usually salt, cumin and coriander as I'm having it with chilli or curry) I've tried steaming it but it goes too soggy.

I make it with a little fry light, quorn (can use chicken pieces if you eat meat), carrots, peas, garlic, soy sauce, then I add in the cauliflower rice and stir fry for about 5 minutes. Then add in 3 eggs into the middle, then stir the cooked eggs through the cauliflower rice, and sprinkle through some sesame seeds. I like it.

You can also try courgetti or booghetti if you get a spiraliser.

Thank you everyone for some great ideas. I'm experimenting and liking cauli rice much better than before.. I've tried broccoli too and think I prefer it.

And I've lost 4lbs so thank you 💕

I sometimes find that rather than having cauliflower rice, I make a cauliflower steak. You can marinade them beforehand too, so perhaps I will do one in tamari, chilli and ginger or miso or if I am having it with curry I do it in a more curry-typical base.
