Looking for inspo for easy and healthy homemade soup recipes to make and have for lunch while working from home please?? Smile

I’m having homemade soups for most lunches... no specific recipes, just onion and garlic base with some other veg (eg peppers, carrots etc); add stock/tomatoes, then a can of beans - any kind or best is a mix (like bean salad or canned mixed beans). Add herbs/spices etc

This would do 2 lunches for me, I would wilt in spinach when I reheat and it’s filling enough without bread

Leek and potato. Fry onion. Add leeks and potatoes. Fry off a bit
Add stock and water and simmer. Cool and add milk and black pepper and blend. Reheat when you want it.

This is easy. You don’t really need cream you could use bit of yoghurt or splash of milk or just leave it.
If you want to make it more substantial you could add a potatoe and serve with cheese.
Any herbs ok or even a bit of mint sauce or a pinch of chilli.

Lentil is easy, carrot, onion stock and lentils. Yellow pea as above just swap lentils for yellow peas.

Scotch broth is my favourite - buy a packet of the dried mix and there’s a soup recipe on the bag.

I usually add fried bacon lardons or shredded gammon leftovers if I have any.

Slimming World Pea and Ham soup. Made with a bag of frozen peas, onion, potato, garlic, stock and shredded ham. Delicious.
Carrot and Coriander, cumin or ginger
Leek and potato
French Onion.
Curried parsnip.

I love carrot, sweet potato and bell pepper soup. You could add butterbeans to it as well, and a little chilli for some spice. So colourful and tasty.

Carrot and coriander is a nice as well but the one above is thicker and nicer for winter in my opinion.

I make bone broth and the top it up woth whatever I fancy. I don't like the thick ones so this works well. If you have a slowcooker you can make it very easily from left over bones, some extra ones from butcher and veg scraps. I freeze reduced portions to make when needed and you can flavour it any way you like. Asian flavours, paprika goulash style, simple chicken and veg. Very versatile and healthy

I like roasted butternut soup, I don't follow a strict recipe, I just peel and chop the butternut and roast til caramelised then add to a fried onion with a tablespoon of curry powder....add stock to cover, simmer for about 20 min and liquidise. Add more stock to get required thickness.

Also do roasted pepper and tomato...roast a couple of quartered and deseeded red peppers, with about 6 large halved tomatoes and couple of quartered carrots, and a red deseeded chilli. Roast until softened and caramelised then whizz up with veg stock and sprinkle of mixed herbs, serve with a swirl of low fat yoghurt. You can sieve it to remove tomato seeds if you can be bothered.

Carrot and coriander...chop an onion and about 450g of carrots (I just do in food processor), fry off for a couple of mins, add a teaspoon of ground coriander and a small chopped potato, cover with veg or chicken stock. Simmer until tender then liquidise with a handful of fresh coriander (add more stock to get required thickness)

@SchrodingersImmigrant how do you make bone broth? I heard someone talking about it the other day - they claim they’ve used it as part of a specialised diet to reverse inflammatory arthritis, but the conversation moved on before I could ask about it.

Always put some beans /lentils/chickpeas in to add protein. Then you don't need bread etc to fill you up

Bone broth?

Bones from a roast, with carrot, celery, onion, herbs, garlic. Cover with water. Simmer for as long as possible I. E. overnight, to make the broth. Really healing.

Cauliflower soup is quick and easy. Dice a white onion and sauté in a little oil (or butter) until soft but not coloured, add a chopped cauliflower, chicken stock cube and a little black pepper, cover with water/milk (I use half and half) then cook until cauliflower is soft. Blend until smooth, adjusting seasoning to taste and add extra water/milk if too thick. I usually grate some cheese on top before serving.

I use all bones and joints I can collect, mix it with veg scraps, little bit of salt, whole black pepper, bayleaf, parsley and lovage if you can get it. If the bones are raw, I grill them in the oven for a bit. Then pop it all in a slow cooker with cold water. I think it's 4 hours on high, then 16-17 on low. Then strain through muslin cloth into pot, reduce and freeze portions. I don't filter for clarity, I just leave it cloudy.
Skin is good too, but usually adds too much fat, so I just stick with bomes and bit of meat on them. It's never the same here. Depends on what's in my scrap bag and whether I get lamb bones on top or some oxtail.

You can make it yours with any herbs and spices

I've just got a soup maker - it's a game changer, I love it! Makes it so easy, I really recommend buying one if you're going to do a lot of soups.

@BornIn78 it's a tasty way to get collagen in. Have you looked into supplements? There is more kind of collagens, but type 2 appears to help in arthritis cases.
