How to eat healthily without fresh veg?

In the current climate I’m worried about being able to access fresh veg and salad to stat healthy. I’ve been trying to lose weight for a holiday (which I know now may not happen) but as I’ve lost a few pounds I’m starting to feel so much better in myself, so I want to carry on.

Any suggestions for healthy (low cal) meals that can be made from the store cupboard/freezer?

Vegetable/meat soup, casseroles, curries and veg packed pasta sauces can all be done with frozen or canned veg.

Some tinned/frozen stuff is ace

I eat a lot of frozen spinach, peas, tinned chickpeas etc

Thanks! I think I need to get a bit of frozen veg in, and I should be okay. Looking at the ideas it seems quite obvious! I think I’ve just got in a habit of meals and they’re helping me lose weight so I’m struggling to think outside the box!

In terms of actual meals you could do things like:
Chilli con carne
Beef/chicken casserole
Beef bourginon
Coq au vin
Almost any soups
Roasted Mediterranean veg
Lamb/chicken tagine
Any curry- I buy Tesco’s frozen curry base mix of onion and spices which is very tasty (and spicy!)
I buy frozen and chopped onion, garlic, peppers, sweet potato, butternut squash and carrots which I use every week in some way or another. This week for lunches I’ll be having a big pan of carrot and red lentil soup, all from the freezer and cupboard. It’s also great when cooking just for yourself as there’s less wastage.

The fresh section in my supermarket was fully stocked this morning. Failing that I always have frozen veg in.
