Lunch ideas that I can take to work

Just as the title says really! I need to find some foods that I can prepare in advance that will not go 'funny'. There is nothing worse than a soggy sandwich.

I am not on a specific diet, I am just trying to change my lifestyle. I have a lot of weight to lose but I am aiming at 1-2ib a week. I go to the gym or some sort of excercise class every day so I need foods that will keep me full ect.

I find couscous with chopped up peppers, tomatoes, cucumbers, scallions etc and some tuna or ham really satisfying. Add a shake of curry powder or some light dressing to change the flavour.

I made my own pot noodles. A nest of fine noodles, spiralized carrots and courgettes, stock powder or miso and some soy sauce. When you want it pour on boiling water and leave for a few minutes . You can add some shredded meat or fish or prawns as well

A pack of smoked ham or smoked salmon, baby tomatoes, red pepper, spring onions, basil, all cut up and mixed with cold pasta (fusilli works well). Tablespoon of light mayo, squeeze of lemon and some cracked black pepper mixed in. You can make a big batch and keep in the fridge for 3 days. It’s LOVELY.

I make mine with Quorn roasted chicken style pieces, in which case it’s only about 400 kcal for a mountain of tasty food Smile

I also like to make bulgur wheat with roasted vegetables. I roast lots of different vegetables once a week and use those to make about 3-4 lunches.

Here are my work lunches:
A packet of the one-portion Tilda pulses range. E.g. www.tesco.com/groceries/en-GB/products/293226810 They're equally as nice cold or hot.
One of the one-portion crustless quiches e.g. www.tesco.com/groceries/en-GB/products/281640912 I heat it up if I feel like it, but more often than not I eat it cold with some green salad that I keep in a bag in the fridge at work.
Sometimes I take a jacket potato that I cooked the previous night and just reheat it in the microwave. I have it with with one of the small one-portions of tinned tuna in tomato sauce. My DH also takes a jacket potato and has it with a snap pot of Heinz beans because he doesn't like fish.
If I have time I'll make this and it lasts a few days in the fridge www.bbcgoodfood.com/recipes/11690/10minute-couscous-salad It only takes 10 minutes.
I went through a spell of taking the individual packets of Ryvita/Jacobs Crispbreads/Jacobs Ciabatta to work with a pot of humous, guacamole, salsa, cottage cheese or cream cheese to spread on them.
It’s not so good in hot weather, but a tin of mixed bean soup or lentil soup is really filling. I also like the pots of fresh soup such as this www.tesco.com/groceries/en-GB/products/265287542.

I make giant salads!

Big Tupperware box then buy:

Flavoured chicken slices
Tinned tuna
Eggs
Cottage cheese
Bag of leaves / lettuce
Herbs if you like eg coriander

prep on Sunday / Weds eve:

Chop peppers
Defrost frozen sweet corn / tinned
Grate carrot
Chop celery / radishes
Dice vacuum packed beetroot
Grate cheese
Boil eggs
Make tuna mayo

On the day:
Chuck handfuls of the above as you fancy into Tupperware. Add chopped cucumber.
Add 1/2 avocado
Choose a protein to add - or 2!

Take separately to add at lunch - jar / bottle vinaigrette and / or mayo / dressing / salad cream

My salads are legendary, massively filling, fairly weighty calorie wise but so so full of nutrition and good fat I feel stuffed for hours.

I wad thinking that spiralised veg, we'r can get courgette and butternut squash from sainsbury's, and shaved carrots (I use the potato peeler to do this for salads) would be a great quick easy way to add to the pot noodle, with some chilli flakes send grated root ginger. Definitely going to do that!
