Favourite really simple healthy meals and snack ideas?

Firstly apologies for the same old thread but I am hoping for some inspiration. Here we are at the end of February and my wonderful plan to lose 3 stone by Christmas has taken a while to get off the ground (rather like I do if I ever end up on the ground...).

What I need are those straightforward, take five minutes recipes/meal ideas that actually work - no specific 'diet', just making a healthy choice rather than another shit one (like today...the white toast and marmite I had after lunch, or the 4 spoons of Nutella straight out of the jar, or the rest of the crisps my son left from lunch...).

My favourite things to grab and run (when I am making better choices..) are:

Marmite rice cakes
A tomato, mozzarella and basil salad,
Watermelon slices
Pomegranate seeds
Raw carrot
Cold pre-cooked chicken
Black pepper Ryvita with tuna or mackerel pate made with cottage cheese
Nutribullet juices - various fruit/veg with coconut water or almond milk base
Wholewheat pasta with a tuna, olives, toms, onions and pepper sauce
Prawns and avocado
Poached egg on brown sourdough with avocado on it
Grilled baby tomatoes on wholemeal toast.

Slightly more prep but:
Tabbouleh
Tomato/cucumber/onion salad, finely chopped with lemon juice & coriander added
Salmon and spinach Thai green curry with brown rice

Could you tell me what your favourite 'healthier choice' meal or snack is for inspiration for a fat middle aged Mum with very little time and an aversion to cooking!? I get that some of the above are not 'low calorie' - but I find that if I make healthy choices the calorie content isn't so relevant & I get a better mindset/eat less because I'm on the right path. Any input very welcome & easy/simple/quick is what I need!! Thanks..

My only problem with soup is that I want to eat massive chunks of bread and butter with it, which takes the healthy aspect away a bit! Although a great idea when it is cold, I might make some mushroom soup this week.

I'm adding porridge to the main list. Scrabbling for ideas though and need the 'grab from the fridge instead of a packet of crisps ideas..? Popcorn maybe & have never tried frozen grapes - but they are always touted as a great snack.

Lots of people seem to think that protein helps fill you for longer and lessens cravings, doesn't seem to work for me but I'm trying things like boiled eggs, nuts, cheese cubes, yoghurt, seeds then the usual like veg sticks, premade bags of salad and fruit.
Still doesn't seem to help with the sugar cravings... I say after cracking open a very large easter egg, eating the egg and 2 chocolate bars...

Oatmeal is the best. I find it more satisfying than porridge from rolled oats - you get more of a texture from it. I take a mug of steel-cut oats to about 3-3.5 cups of liquid, mostly just water is fine as it goes really creamy as it cooks, but add a bit of milk as well. Pinch of salt. Cook on a low heat for about 30 minutes or so stirring regularly as it sticks. I often chop up and add cooking apple for the last 10 mins or so but if you'd prefer to serve with other fruit/banana then no need for that, I just love apple oatmeal. When it's cooked through and cooled I decant into a big tub and put in the fridge, then in the morning I portion out a bowlful, add a drizzle of milk and zap in the microwave to reheat. Add different fruit or a spoon of peanut butter or drizzle of honey or whatever if you want. It's faster than the instant porridge sachets and much more hearty, you get a nice bit of a bite/chew from the bigger pieces of oat rather than it basically being made from oat-dust and going like Ready Brek.

My favourite easy meal is sliced peppers, onions fried in spray oil with a tin of tomatoes, add herbs and make a dent in the mixture break egg in and poach it in mixture. I like it on a piece of granary toast.
or add stock and rice or Quinoa and cook til grain is nearly done then add egg.

Hummus and sour dough. Gives you that “bread and butter” fix.
Olives, pepper, cucumber with 30g cubes cheese.
Chicken salad
Cous cous, with olives, cheese, tomatoes (whatever you can find really)
Steamed veg, any veg is fine with gravy made as the package says (although it contains salt the nutrients in the veg is amazing for you, feels a bit like roast dinner)
Omelette made with eggs and a splash of milk with veg or ham added.
Gammon is low in calories and a nice meat fix and stops salt cravings.
Swap potato for sweet potato topped with reduced tinned tomatoes and a little bit of cheese and salad for a quick lunch.
