Five weeks to the Big Day. If you're like me and feeling a little bloated and a little fed up but would like to feel a little lighter and fresher in time for festivities, join the thread to share and gain motivation & inspiration.

I'm a little under 5ft and about 11 stones. I am disabled so I exercise is limited but i do what I can. I am also glutton and lactos intolerant and try to eliminate those elements.

My diet is clean but clearly I'm still taking in more than I need. By clean I mean minimum alcohol, most meals prepared from fresh, loads of vegatables & fruit, fresh made soups and smoothies, drink loads of water etc. I also take a vitamin supplement.

This is a soup recipe I'm doing today. It's warming & nutritious. The quantities are approx as it's my own recipe and I generally just chuck stuff together.

Roasted Sweet Potato & Carrot Soup.

1lb Sweet Potato peeled and chopped into chunky slices
1lb Carrots peeled and chopped into slices
2 Red peppers de seeded and quartered
2 or 3 Garlic cloves peeled, left whole.
Pop in a large food bag, drizzle with Olive oil. Add salt, pepper, chilli powder. Give a good quish and then empty contents into a roasting pan. In oven 180 for about 30 minutes.

In the soup pan add:-
Couple sticks of celery finely chopped.
Medium onion, peeled finely chopped.
Little bit of s & p

When roasted veg are soft, remove from oven and add to soup pan.

Add about 2 pints of stock or just enough to cover your veg. This can be from chicken or veg stock cubes or home made.

Add about 1/2 inch fresh ginger grated or add about 1/2 teaspoon of powdered ginger. Add 1/2 teaspoon turmeric. Bring to a simmer. Remove from heat, blitz with a stick blender

I find this a lovely warming soup. Nice with crusty bread if you're not glutton intolerant. Have at lunchtimes and it keeps me full until my evening meal.
