quick to prepare, healthy meals ideas

hi all! I gave birth to dd1 Smile 6 weeks ago and by some miracle (morning sickness, induced early, ebf) have lost all but 2lb of baby weight. however at 5ft 6 and 11st 1 I'm not exactly at my ideal weight! I don't have a set amount I want to lose - I just want to eat healthily and do something each day (walks, baby groups) to get to a healthier size and weight.

So I'm wondering what ideas you have for quick to prepare meals as we don't have much time!

I buy pretty much all my veg pre prepared btw to save time. I personally think it's worth the extra cost for us at the mo to keep us healthy and away from the chips!!!

this is what we have so far:

  • chilli
  • "spag bol" (using the leftover chilli)
  • fish (bunged in oven in foil) with jacket potato and veg
  • stir fry
  • beef stew (slow cooker)
  • chicken and lentil curry (slow cooker)

I'd be really interested in your meals Smile

Hi - sounds axing how well you are - congratulations!

I'm all about frozen chicken breast pieces and then quinoa - then adding some chopped salady bits. Key is to make sure you eat enough protein. So I have eggs for breakfast too. Have u thought of 'buggy fit' I think they run them all over the uk. It's transformed me and I was never a fit person before.

I love grilled tuna steak, I chuck Cajun spice on them and do veg or salad. I find tuna steak more filling than other fish.

Sounds good but be wary of prepared veg, fruit etc. Once you cut up these items their nutrients start to deteriorate and don't the wash them in chloride?

I find soups handy, especially if buying ready chopped veg- I think some supermarkets do a base. Chuck in beans/ lentils for protein, small pasta or potato for carb. Even my super fussy 2 year old eats the and they're dead quick and easy. Also about 250-300 calories per generous bowl.

Also frittatas quick and protein rich, I put in loads of veg.

Veggie chilli made with roasted squash or sweet potato.

Am 5'6 too but currently 12 stone 8 with a 14 week old. Am about 10 pounds below prepregnacy weight but 2 stone to go! Also appreciate the need for quick recipes as it's currently a madhouse here!

Ps- OP I hope you don't mind me asking, please don't reply if offends but what dress size do you wear? I'm currently in 18s but would like to be a 12/14 and hope 10 1/2 stone will put me in these....

Depends where I am. In Northern Ireland, almost every supermarket and a lot of local shops do "vegetable soup" packs- celery, carrot, leek, parsley. In England (where I live now) waitrose do 2or 3- butternut squash, carrot and coriander and a more general vegetable. Also think I've seen something similar on tesco.

Congrats on your dd!

When mine were newborns I would spend the occasional Saturday batch cooing for the freezer. Everything you've said and casseroles, soup, lasagne ETC.

Porridge made with half milk, half water is great for breakfast. Great for bf because it fills you for so long and supposed to be good for your supply.

batch cooking's a great idea. I'm going to start to freeze more, it's tricky though as dh has a huge appetite and would wat everything cooked if he could, no mater how many portions it is!! he also dislikes the look of food when it's defrosting... very fussy! maybe I'll freeze in secret!!

porridge I love! making with all milk though, I just love milk Grin
