Having read through the book last night - thinking about lunches and bringing mine to work - can I have soup and an open faced sandwich - not sure if this would too much?

Sounds ok as long as bread is wholegrain. Big salads are also very good for lunch...you can have new potatos to add carbohydrate.

Thanks Robin - just dont want to eat too much and am pretty lazy/tight on time in the mornings so thought soup and either a salad or open faced sarnie would be easy

hmmmm. I would be wary of eating bread as part of your daily routine tbh, even if wholegrain.

AFAIK, pasta's GI is a bit better, as is basmati rice, so how about a salad made with one of those, to go with the soup?

or, the better option imho is a salad made of just leaves and protein (or maybe some beans, e.g. cannellini beans).

try and include some protein as that will lower the overall GL of the meal - e.g turkey breast on your sandwich. Cottage cheese is brilliant as well - I often mix it with some dried or fresh fruit to make it more interesting but it is low calorie, low fat, low GI and full of protein.

  • I love cottage cheese - in fact I'm tucking into a bowful now - although I'm very choosey where I get it from - some are awful and lumpy. I guess I must be a bit strange .

I thought Oatcakes were low GI too but no mention of them in Rick Gallops book - any advice on these?

Definitely the Nairn oatcakes are as long as you don't have too many - and they are really tasty.

You can get Ginger oatcakes which are low GI and taste like gingerbread men.

I love oatcakes thought I would have soup oatckakes and some cottage cheese for lunch - cant wait to start this diet on Monday now !!! thanks
