Which diet/way of eating?

Hi all,
I need the collective wisdom of you weight loss successes to make a decision for me help me make a decision!

I cannot settle on which way of eating I should follow to lose weight and instil healthy habits. I have been researching but now find that my head is full of so much information of how various diets have been successful for various people that I cannot make a decision for myself! So I turn to you to guide me...

A few facts - I am 37, lone parent with a bf 1yr DS, but I am in the process of selling my house so pretty much live with my parents (our eventual aim is to all live together in a bigger house). They are in charge of grocery shopping, and cooking; they will buy foods I request, or I buy them myself, but the kitchen is tiny and food storage space is limited. I work 3 days a week of shifts, otherwise my time is spent recovering from sleepless nights my own to spend with my DS. Because of shifts I find it difficult to stick to a fixed routine, but I know I am better at sticking to a WOE with a routine of sorts. Things that get in my way are: no space in the fridge, or worktop/storage space in the kitchen, a lovely DFather who is basically a 'feeder', a habit of hoovering up DS's leftovers, and a habit of going for the easy option Blush.

My diet is very carb heavy, cereal/porridge for breakfast, sandwiches and cake for lunch, always something carb based for dinner, lots of Brew plus I have developed a terrible sweet tooth since breastfeeding, and snack on crap constantly. I have a shameful amount of weight to lose (I am 5'4 and currently bordering on 16 stoneSad) and a need to do this for my health and for my son and our future.

I have previously tried hypnotherapy, WW, SW, Slimfast, calorie counting, Atkins (briefly, and probably not properly) and have looked into high protein/paleo, Lighter Life, Paul McKenna I Can Make You Thin, and myriad others.

Is there anyone out there who can offer an opinion on which would be the easiest to maintain/fit into my random lifestyle, or even ideas on what won't work? I'm not looking for a quick fix and know I need to put a lot of effort in, but I don't want to sabotage myself by choosing an impossible to maintain plan.
