Any ideas for low carb meals while camping?

We'll have a two ring gas burner and everything needs to cook relatively quickly and not use masses of gas. We'll have a frying pan and a saucepan.
So far I've got:
fry up (that one was easy Smile
steak with salad
chops with low carb veg...

We're away for quite a while, and I've just had a few days where I was off my diet due to visiting others. Usually when camping it involves lots of rice, mashed potatoes, toast, biscuits etc. But I feel so much better when eating relatively low carb paleo. Am feeling pretty rubbish today after too much sugar this week, so I really want to get back on track. Anyone got ideas? Thanks in advance!

One pot stews are quite handy for saucepans - chucking in chorizo and borlotti beans with tinned tomatoes, something like that.

Also, salads using tinned lentils/chick peas/etc with halloumi/goats cheese also work quite well as the the lentils just need rinsing and warming, and the halloumi just needs a couple of minutes each side in the fryinfg pan (again dry fried, so easy to do)

We always seem to eat a lot of eggs when camping, omlettes and salad is a staple.

How about sausages with creamy mushrooms, spicy chicken strips and salad, gammon steaks with a fried egg and mushrooms?

Mmm sausage and mushrooms, that sounds lovely. Like the chicken idea too - I had a really nice thing in a restaurant the other day called 'Bang Bang Chicken Salad' - must look up and see if I can get the recipe. The chicken was in a sort of peanut butter and chilli coating. It was yummy. And gammon steaks are lush.

We won't have a fridge so I guess we'll need to shop every day. We'll be by the sea so maybe we can buy some fish and cook in the frying pan with some buttered veg on the side...

Can you take a cheap bucket BBQ, or disposable one?

Then you can enjoy any meats and you won't require any separate cooking?

Seafood sounds yummy, cook straight away though? No mussels/prawns stored in a hot tent in a Luke warm cool box!

becstar we're going camping too for two weeks, and like you we won't have a fridge. we're planning to shop on a daily basis but have some tinned tuna etc on standby for when we don't manage to get to the shops, also plenty of eggs too

Am going to make a veggie chilli to take with me for the first night. Trouble that I have is I now use 3 pans whenever cooking as make pasta/rice/potatoes for everyone and then my low carb alternative

Only camping for 2 nights this weekend so should be ok
Salmon or fish on BBQ wrapped in foil make work though

I follow a low carb diet meal plan myself so I would recommend maybe lemon and ginger roast chicken, red chili and ginger chicken Shirataki noodle soup (ANY kind of soup, really), sea bass fillets with herbs and spices. Fish cooks easily so I?d suggest making fish with some sort of stir-fried vegetables more than anything!
