Low carb meal ideas for one handed preparation and eating

I know there's low carb bootcamp threads but they are enormous and I don't have time to read through properly!

So, anyway, I have a new baby and would like to not look 5 months pregnant for the rest of my life. Not unreasonable?

But the blumming babe keeps needing stuff from me and I don't get time to cook any more. So please can you inspire me with quick and easy low carb meals and snacks that I can grab in between the two-hourly feeds?

I'm not counting carbs, more IPD/Briffa than Atkins.

So, my current daily eating usually goes:

Scrambled eggs, sometimes with mushrooms or whatever.

Chicken and salad.

Steak and er, salad.

snacking on (too many) nuts.

BORING!

must dash!

Re. easy low carb food and snacks some ideas here:
. full fat Greek yoghurt
. cheese
. cold chicken/ham/smoked mackerel/tuna mayo with salad
. celery/cucumber slices and peanut butter/pate/tzatziki

. moussaka, good recipe on Bootcamp recipe thread - although does take a little while to prepare and make but worth it imo and will do for a couple of meals
. bolognese sauce with salad/courgette/other veg
. cauliflower cheese without the flour, use cream and grated cheese (can do this in microwave so quite quick)
. roast chicken and veg (choose low carb veg such as courgettes, mushrooms, broccolli, leeks, any greens really) - bung chicken in oven with some lemon and herbs inside and stir fry veg
. baked salmon and veg - salmon in foil parcels in oven with soy sauce and garlic and chilli, stirfry/steam/microwave veg

Do you like gherkins Roobs? Sainsbos do ones in just vinegar (sour as fuck but ok if eaten with cheese)

I like nice ham rolled up with full phat Philly in the middle.

Chicken cooked in cream and herbs, urm.....these are off the top of my head but will have a proper think and get back to you.

have managed to rustle up a bolognaise which is bubbling away now.

how do you do cauli cheese without flour? cook the cauli first then cover with cream and cheese?

Quincey , I'd forgotten about ham roly cheese things, brilliant. Chicken in cream and herbs...mmm...

Has anyone tried the scotch eggs covered in pork scratchings? I' wondering how tricky they are.

Hi Rooobs. Cut the cauli up into florets and microwave in a little water (drain off before adding sauce) or steam for 4-5 mins until tender, stir in double cream plus grated cheese, nutmeg if you want, and microwave for another 3secs-1min or finish off under the grill.

I have also tried the cauliflower rice (just process the cauli until small grains) then microwave for 4 minutes without any water, and top or serve with anything you like. It's really good surprisingly especially with grated cheese and butter stirred through!

Get hold of some of these sausages (Sainsbury's sell them), and fry the whole lot up. You can snack on one as and when, or use them as the basis for a meal. They are really tasty.

I always have hard-boiled eggs in the fridge as well. They are great as a quick snack, or I have them mashed up with mayo or as the basis of a salad meal. They also make a great dish if you cut them in half, place them cut-side down in an oven-proof dish, spoon some full fat yoghurt on top and then some grated mature cheddar. Grill for 5-10 minutes until the cheese is nicely browned on top.

Cheese is a good, quick snack - just not a whole packet!

Olives are fab, and very low carb.

Will think about meals later.

Pizza with a cauli base is really nice (honest) and is better cold the next day, and can be eaten with fingers!

Mmm they are good, the prawn bhajias are lush too. Served with a Greek yogurt raita.
