Low carb for those of us who aren't hardcore enough for Bootcamp/Atkins induction etc

This is a thread for anyone who wants to eat fewer carbs but has either failed on plans than start out really low carb or just doesn't want to eat very low carb for whatever reason. I'm of the opinion that the high carb diet recommended by the government is the cause of obesity and related diseases and that any reduction in carbs will boost health.

While the Bootcamp threads are fantastic, I think a lot of people find it difficult to dive straight into eating very low levels of carbs which leads to giving up by day five. I did this myself when I first tried low carbing last April. I wasn't even trying to eat induction level carbs, just cut out the obviously high carb elements of my diet (rice, potatoes, pasta, bread etc) and I still nearly killed my housemates. It was about six months before I tried low carbing again and I went about it in a completely different way and have ended up eating induction level carbs through preference.

First I cut down my carb portions slightly in each meal, waited a week or two then cut down the portions even further so I was only eating about half the starch element that I had been in each meal. The next thing I did was completely remove the starch from one meal - I think it was breakfast I did first. I had been eating a poached egg on a slice of toast with a slice or two of lean bacon and some mushrooms or spinach - all I did was cut out the slice of toast and replace it with more veg or an extra egg depending on how hungry I was feeling. Once I was happy with that I started on dinner. Instead of rice I had cauliflower rice, instead of potato mash I had cauliflower, swede or celeriac mash and instead of noodles/pasta I had either shirataki noodles or thin ribbons of courgette. For the first while I still mixed in half a small portion of e.g. rice with my cauliflower rice. I normally made enough dinner to have leftovers for lunch the next day. I lost really well on that without worrying about how many carbs were in veg and I still had milk in my tea and berries with yoghurt. I also had a couple of beers a week and the odd slice of cake or whatever. I only went very low carb after doing a lot of reading and deciding that eating a diet very low in carbs and high in fat (including saturated fat) is the healthiest diet for us.

Food is more expensive in that I'm eating more meat that I usually would but the if I think about all the moeny I'm not spending on junk it probably evens out. And I agree it doesn't seem hard to eat this way as all my meals are really tasty.

Well done to you bbcessex I love the feeling of 'oh I'll just try that dress on and see if I'm nearer to fitting into it' and voila, dress fits! That's what spurs me on.

OK - low carb white sauce for such dishes as fish pie - any ideas?

I have cream, milk, cream cheese, cheddar cheese, feta cheese, cornflour...

Thank you for this thread. I am not really looking at losing weight, just avoiding the slump after lunch and two hour nap. I have made notes through the thread and will be shopping next week accordingly. I am thinking about laying off the black tea. I think it messes with me. I get enough sleep every night. I'm hoping that by laying off carbs in the morning it will keep me awake through the afternoon, and then by having less or no carbs in the evening it will help me start the day right. I usually give my little children porridge for breakfast, and eat half a bowl myself, it gives me the confidence for a swim. Looking forward to the meat and veg really.

Melt cream cheese and add grated cheddar. If your cream is double you could thin it with some of that too. Hope that's not too late...

Our new fat measuring scales arrived yesterday. Weight accurate and muscle/fat all within normal limits. Visceral fat 5% which I am really pleased with as I put weight on round my waist. Body fat 32%, which is apparently normal Hmm but I want to reduce. Skeletal muscle was normal but I can't remember, though logged into scales so I can compare.

Fasting again over lunch today. Been doing it odd days as dp took dd1 swimming so I was only getting lunch for dd2. Haven't been brave enough to skip breakfast or dinner, yet.

jessepinkman maybe not so good... I used to think I couldn't eat a big lunch for the same reasons. Make sure you have plenty of protein/fat if you take out carbs to sustain you through the pm. Maybe have a snack ready too.

I made the low carb shepherd's pie with celeriac mash from the bootcamp thread, it was delish! Dp had seconds, dd1 ate half (normally hates it) and dd2 polished hers off.

We also had a low carb crumble for a treat, based on a recipe I had seen on mda but couldn't find again so I ad libbed. Plums cooked in a little butter, 1/2 tspn honey, vanilla & splash of red wine. 1 desertspoon of plum mix in a ramekin with a crumble of milled flaxseed & nut mix, butter, cinnamon and stevia. Served with full fat creme fraiche. Came out at 8g carb per portion. Will be making that again.

I have started reading The Primal Blueprint today.

Hello All.
I have been low carbing for the last week having read Dr Briffa waist disposal.
I'm amazed how sometimes I'm not that hungry.
Anyway I have a couple of questions for you experts....

Lindt dark chocolate....are the mint or orange dark chocolate worse in terms of carbs and am I better off sticking with plain?

Also,I am avoiding fruit apart from berries but I was wondering how bad grapefruit is in the sugar stakes?i ask because I have a tin of it in the cupboard.

MrsHoolie hello! I have just checked the carbs for lindt chocolate on mfp for you. Lindt 70% is 20g for 40g/4 squares, mint/orange is 23g/24g whereas 85% is 7g as much more cocoa mass and less sugar- can't imagine you could eat much of it! If you check the nutritional info it should tell you the g carb per 100g so you can see how carby something is.

I am not craving slabs of dairy milk as usual so will stick to either of those Lindt dark chocs as they both look pretty good.

I've been doing OK with this, on and off, but I appear to be having low blood sugar episodes.

Today was quite a bad one.

I had
10am: 3 egg omelette, mushrooms cheese and ham.
12 noon Eat Natural bar
4pm raspberries, a few blueberries and cream and some pistachios.

I then got really sleepy, then sort of woke up with palpatations and dizzyness, feeling terrible, lightheaded and disorientated.

Had a banana, a yoghurt and some toasted seeds and feel better now. I'm not remotely hungry though, in fact finding it really hard to fancy anything at all. I do struggle to cook for just myself anyway.

WDYT? I felt rubbish enough that I'm tempted to go and see the nurse tomorrow, as it's happened several times over the last few days.

mmm crunchy are you eating enough?
Your list of food for Tuesday looks pretty sparse.
With this WOE you need to include plenty of snacks especially in the early days when your body is adjusting.
Your body is used to a steady supply of carbs (easy fuel) but has not yet adapted to using your own fat for fuel so that could be why your BS is dipping. In some ways by giving in and having a banana you are not letting your body learn how to burn fat for fuel.
Snack on salted roasted nuts, cheese, dark choc and eat little and often.
Also the eat natural bar will be packed with carbs abd sugar!!

I'm rubbish, I really am. I did so well for a couple of weeks, cooking good meals etc, but I've totally gone off it. I'm just not hungry! Or rather, I am, but I want carbs or crap, so don't have anything at all.

I know I need to do this WOE, my whole family are overweight and most of them have Type II diabetes, low-carb is the best way to tackle that! I'm not overweight (10 and a half stone at 5'7) but have waist to hip of 0.84 which is not great. I've lost 2" with this over the last 6 weeks, without losing much weight, and without losing elsewhere, which is brilliant.

I am just struggling with laziness I think, I find it so hard to cook for me, so either grab processed crap or nothing at all. I'm great at mornings though, the omelette start is ingrained now, I feel properly crap if I don't get it!

Crunchyfrog I have very similar measurements! 5'7", 10st 4lbs and waist to hip 0.83. We have new fat measuring scales so my visceral fat is 5%, which is good. Not sure what it was before... My total body fat is 32% which isn't so great, I hate to think what it was before I lost 12lbs. I really want to reduce body fat and increase lean body mass.

Planning meals is definitely the key. There's lots of links to yummy recipes on here for ideas. We had halibut steaks (on offer) yesterday baked with a bit of butter and fresh herbs & steamed veg. Very easy ans quick, could use for other fish/meat as well. Or make extra and freeze meals.

I am fine with the food and eating between 30-40g carbs per day, been in ketosis for quite a while but I had slowed down my exercise as lack of school/pre-school run and a shoulder injury. So I started intermittent fasting (wouldn't recommend if not fat burning) and upped my exercise to lots of moving around slowly/occasional weights/yoga/pilates. School run starts again tomorrow. Will see what happens then.

Quirky, how do you know you are in ketosis please. I have been low carbing for about 6 weeks now and loosing weight steadily. I have some ketosis sticks but have never found any ketones in my urine.

I haven't bothered the sticks but if you are under 50g carb per day you will get into ketosis. After about 17days iirc I stopped feeling so hungry or feeling that need for the snacks between meals. That blood sugar thing is gone.

Another great thing I've discovered about low carbing is that the keratosis pilaris (goose bumpy things) on my upper arms has completely disappeared. I now have lovely smooth skin.

I'm not sure if it's that my body likes that I'm eating more fats or if it likes the fact I'm not eating sugar or gluten. It likes something though Smile
